Feeling Lovely + {Chocolate Covered Strawberries Bread}

I think I'm going to get a little deep today.  The truth is, I don't feel particularly lovely lately...which makes it hard to accept love and kindness and compliments from others. In one ear, a big smirk, then out the other.  I've been all shapes and sizes along the way, and yet I struggle at all of them to truly love myself and my body. In those moments of struggle, I try to focus on the positive and think of 3 or 4 things I truly love about myself at that moment. Here goes: ... Paleo Valentine's Menu + {Walnut Encrusted Scallops}

You may have noticed the word "paleo" in the title of this blogpost. Let's just get this out there now: I am not paleo, nor do I ever plan to become paleo. I love chickpeas and quinoa and cheese waaaaaaaaaay too much!!! But, that said, I got together with a group of lovely other healthy food bloggers and we came up with a fabulous health(ier) Valentine's menu that just happens to be paleo. ... Lemon Cupcakes with Blueberry Buttercream Frosting

The only non-cartoon show my toddler likes is the Food Network's "Cupcake Wars." And it is such a welcomed break for something to watch together besides Dora, Sophia the First, Cat in the Hat, etc... There's something about those high-pitched LOUD cartoon voices that irk me to no end. But cupcake baking, I could watch that all day!! I love seeing all the different flavor combinations, decorations and displays, and hearing the judges talk about the taste and texture. ... Over-the-top Delicious Pecan Pie without Corn Syrup

First a confession: I am totally into that Food Network show "Chopped"!! I love seeing what's in the basket and what each contestant decides to create -- both from a culinary perspective and also the design/presentation. So when Ancient Harvest Quinoa invited me to participate in a "Chopped-style" contest this winter, I was almost giddy. ... Read more » about Over-the-top Delicious Pecan Pie without Corn Syrup

The Vegan Debate + {Cranberry Banana Bread}

It wasn't a philosophical debate about whether to be vegan. No, I had an internal debate over the word "vegan" this weekend. Put it in the blog post title, or no????? Call the recipe "vegan"? I know that some of you may see the word vegan + baking and go running the other way. Please don't!! Just because there's no eggs and no dairy doesn't mean it's weird or doesn't taste good. Actually it's quite the opposite. ... Read more » about The Vegan Debate + {Cranberry Banana Bread}

Yummy {Sweet Potato Pie} on a Maple Quinoa Crust

Let me just start out with this:    I am in love with this pie. It was all I had hoped for and more:

  • Tasted divine.
  • Perfectly cooked.
  • A quinoa crust success.

And Babycakes and I may or may not have had 2.5 slices for breakfast after yesterday morning's photoshoot... OK, we did, and it was awesome!!! And I didn't even feel that bad about "pie for breakfast" because, ... Read more » about Yummy {Sweet Potato Pie} on a Maple Quinoa Crust

Fabulous {Holiday Bread Pudding} w/cranberry bagels

As I mentioned in my recent Holiday Bark recipe post, I am in full-on holiday mode.  It's just a matter of days before the decorations come out. And soon we'll be heading out into the forest to chop down our tree.  I admit, I've already lit the pine "Christmas" candle...more than once. And Babycakes and I have started to listen to Christmas music in the car on our commute to work/school. ... Read more » about Fabulous {Holiday Bread Pudding} w/cranberry bagels
