Bourbon Tilapia w/Baked Sweet Potatoes & Peaches

I hope you all had a lovely 4th of July!  We relaxed at home, splashed around in the sprinklers, and enjoyed a bbq with the fam.  We had some out-of-town guests come over Tuesday night, in town for the holiday, so I made a SECOND batch of this wonderful recipe that I'm going to share with you today! I doubled the recipe: 3 casserole dishes overflowing with sweet potatoes, peaches, and tilapia...and by the end there was literally not one bite left.

Lemon Blackberry Grilled Cheese

If you've spent much time on this blog you know I don't like added sugar, I do like cooking with Greek Yogurt (especially breads!), and I love teaching my darling toddler about living the happy healthy life.  Another theme seems to be emerging though...a deep found love for grilled cheese.  First I made this Smashed Blackberry Grilled Cheese after I saw a mouth-watering picture on Pinterest.  Then I made this ... Sale Papers + {Watermelon Bacon Salad}

I did something for the first time in 31 years yesterday.  In light of the big changes coming up in my life, I mentioned that Dear Hubby and I would be tightening our belts a bit, sticking to a strict budget (until we figure out exactly how one income is really going to feel), and simplifying things.  I also told you about our mail organization - every item on a daily basis either goes in the "To File" container, the "To Pay" container, o ... The Red Table + {Strawberry Pesto Grilled Cheese}

My friend Gina has a blog called Running to the Kichen, and I am always jealous of a) her photography, b) her meals, c) her extreme creativity, and d) her really cool backgrounds.  I had the privilege of meeting her at Blend, and love her to death! She recently wrote a post about her special "photoboard" with instructions on how to create your own.  I was so excited to try to make one of my own someday (in all my spare time, ha!!).  But then I remembered

{Pineapple Teriyaki Meatloaf} made with Greek Yogurt

There's some people who just like things the way they like them: Traditional. Simple. Predictable.  I'd venture to say Dear Hubby is like this...in most areas.  But me, not so much.  I like flair. I like creativity. I like trying new things. I like making grilled cheese with blackberries & basil. ... Read more » about {Pineapple Teriyaki Meatloaf} made with Greek Yogurt

Smashed Blackberry & Basil Grilled Cheese

Time to fess up: How often/long do you look at Pinterest?  I'm probably a 15 minute a day kind of girl. I was perusing the other day, scrolling through the hundreds of pins and images when I was immediately stopped in my tracks.  I saw the most beautiful sandwich my eyes have ever seen.  I even commented on it, which I never do: "WOW. I am salivating! That looks so yummy - and the best part is... ... Read more » about Smashed Blackberry & Basil Grilled Cheese

Broccoli + {Go-To Meal: Lemon Ginger Sesame Chicken}

As you probably know, I've made it a priority to get healthy this year: going from the Obese BMI range down to the Healthy BMI range, which I celebrated with a photoshoot!  This all stemmed from my strong desire to teach Babycakes what it looks like to life a happy healthy life.  How could I teach her, if I wasn't living it out myself?  It has been a wild ride, with challenges along the way, but I am loving ... Go-To Meal: Taco Salad

I got this idea from one of my new Blends (Blogger + Friend), Lindsay.  She blogs over at The Lean Green Bean.  She talks about in this post, how we all have "go-to" meals...you know, the ones that are quick and easy and delicious and that we can pretty much make in our sleep.  I loved her series idea so much that I want to do it on my blog as well.  These go-to meals are often simple and mayb ...
