E-Cookbook Giveaway!! + {Double Chocolate Brownies}

Super way back when, I wrote an e-cookbook (which this original blogpost highlighted). It was a compilation of 30 recipes with nourishing add-ins like chickpeas and Greek yogurt and quinoa. Sound familiar? It should! Because that became the foundation and catalyst for my REAL published cookbook: Superfoods at Every Meal! But let's just talk about brownies, k?

These brownies feature two of my favorite nourishing add-ins: chickpeas and Greek yogurt!

Double Chocolate Brownies

Double Chocolate Brownies

Description

Nourishing Double Chocolate Brownies // @noshandnourish

Ingredients

1⁄2 cup Chickpeas
1⁄2 cup Plain greek yogurt
1⁄2 cup Coconut Sugar
5 tablespoons Cocoa Powder
1 cup Almond Milk (or sub regular milk)
1 teaspoon Vanilla
2 Eggs
2 cups Whole Wheat Pastry Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 cup Dark Chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix totgether the chickpeas and almond milk in a medium mixing bowl. Blend with an immersion blender so that the chickpeas are blended and not lumpy.
  3. Add in the remaining ingredients.
  4. Rub butter on a 9 x 9 baking dish, then dust with cocoa powder.
  5. Pour in batter.
  6. Bake for 30 minutes.
  7. Serve with milk (optional).

Yields 9 Brownies
