{Greek Yogurt Pineapple Nut Smoothie} - HLTT4

I have been on an almond kick lately. Why? Besides their obvious nutritional awesomeness (healthy fat, high protein), the main reason is because I bought the most gargantuan bag of Blue Diamond Natural almonds at Walmart last week! It is literally 2 pounds of oven-roasted sea salt almonds. I've been munching on them for snacks, crushing them up with avocados into a paste (did you see yesterday's Avocado & Corn Bites?!), and now blending them up into a smoothie.  Dear Hubby originally scoffed at them, but now can't keep his hands out of the bag...they're that good!

Introducing this week's Healthy Living Thirsty Thursday:

{Greek Yogurt Pineapple Nut Smoothie}

High in protein, Vitamins C & E, manganese, potassium and fiber, this smoothie delivers a heavy nutritional punch.  It features frozen pineapple, Pineapple Greek Yogurt, coconut water, kiwis, almonds, and agave nectar.

This tastes like vacation in a cup!

Each week I've been asking for your input on what you'd like to see in the following week's juice or smoothie.  I love having you participate and help decide what I'll create next!  Bethany and Rebecca both suggested pineapple last week... you ask, I create.

The flecks in the smoothie are the seeds from the kiwi fruits and small bits of almond.  This was even good as leftovers the following morning, as it wasn't ice-based...a major win in my book!

Greek Yogurt Pineapple Nut Smoothie | No Sugar Sweet Life

Ingredients

2 cups
Frozen Pineapple Chunks
1 cup
Greek Yogurt (I used Pineapple Chobani)
3  
Kiwis (peeled)
1⁄4 cup
Almonds
1 cup
Coconut Water
1 tablespoon
Agave Nectar
8  
Ice Cubes

Instructions

  1. Crush ice and almonds in blender.
  2. Add remaining ingredients.
  3. Blend until smoothie.
  4. Sip from a pretty straw (optional).

Yields 36 Ounces

The pineapple Chobani is my favorite one, hands down. I bet this seriously tastes like vacation with all that pineapple going on. I'm also seriously in love with your straws. :)

I saw the straws on Lee's blog I think (Fit Foodie Finds) and was like I NEED THOSE STAT!!!! They're "disposable" - made of paper... but sooooooooo cute and worth it :)

This sounds delicious! I am in love with exotic fruits like this. Would mango or lychee be a new flavor to try?!
Also, how many servings does this make?

It made a little more than 2 big glassfuls. Mango would be wonderful... and I don't know about lychee! You'll have to let me know :)

Hello, I saw a youtube video on peeling these from a pastry chef and the method is excellent, Cut off both ends of the Kiwi, then insert a larger spoon (like a soup sized spoon) between the fruit and the skin and run the spoon around the fruit between the skin/fruit and the kiwi pops right out lickety split.

This sounds amazing! I love being creative with smoothies. Have you ever thrown some fresh mint leaves into your smoothies? It's my favorite secret ingredient! I always use it. It makes them soooo sweet and brings out the flavor like crazy without being too minty.
