Big Announcement + {Pink Leopard Cocktail} - HLTT#2

I'm just FULL of announcements lately! There's just so many exciting things happening, wonderful momentum, and things clicking into place. Oh, hi, by the way! I've missed you guys :) I'll be doing a Phoenix recap post soon! So what's the big news? Well, I'm excited to announce that I am joining the team of talented writers over at jointhereboot.com (this is the vibrant community around the juicing documentary Fat, Sick, & Nearly Dead)! I will be writing regular posts/articles about healthy living for the entire family. I am honored, excited, and so encouraged for this opportunity. My first post goes live next week!

What is HLTT?
No longer is Thirsty Thursday set aside for college males to down as much cheap beer as humanly possible. No. It is being redeemed by the healthy living community! Blog about a new juice, smoothie, or cocktail recipe each Thursday and link up at www.nosugarsweetlife.com.

For this week's HLTT, the ingredients:

Fresh smashed blueberries bring a wonderful sweetness (without sugar!)

Introducing the {Pink Leopard} - wonderfully named by my 78 year old grandmother who hasn't had an alcoholic beverage in like 30 years! It's pink, it's spotted with smashed blueberries, and it inspired my grandmother to have a sip of vodka at 2PM in the afternoon!

A lovely drink to share with friends, in pretty glasses.

I will close with my favorite pic from the recent trip to Phoenix to visit my grandmother. 4 Generations: Nonni, Kelly, Babycakes & GiGi.

{Pink Leopard - a summer cocktail}
Description
Pink Leopard: a refreshing summer cocktail made with fresh blueberries | No Sugar Sweet Life
Ingredients
Notes
*To make this a Mocktail, replace the 2 ounces of vodka with an additional 2 ounces of tonic water or club soda.
Instructions
- Smash blueberries in a small bowl.
- Put ice cubes in a glass.
- Pour in a shot of Vodka.
- Pour in French Lemonade.
- Top off with Tonic Water.
- Mix in the smashed blueberries.
- Sip. Enjoy. Relax!
Yields 16 Ounces

I've never used coconut oil before. Is it mostly just for the coconut "flavor"? Also, is it possible to add the HLTT logo to your post, even though it's a past post? It would be great to include it since it's part of the link-up this week!

Awesome, Kelly! I am so happy for you. You are such an inspiration and they will be lucky to have you! I think I am gearing up to finally do the Reboot... I am a little nervous for what I'll be like with little to no solid food but I'm pretty sure it will be much harder on those around me than myself :). Haha, just kidding (sort of... ). I'll be scouring some of your older posts to get me started. I'll keep you updated :)

Do you know if it tastes just
Do you know if it tastes just as good with club soda since most tonic waters have HFCS? I really want to try it, but have been trying to make the switch from tonic to club soda (kinda gross), so something to make it more palatable would be great.

It would taste great even without the tonic water. The lemonade is bubbly already :)

I was surprised by what a great sweet flavor the blueberries added! Per a reader's request, I added instructions on how to make it a "mocktail"... which I'll do in the future too. Also - I've been thinking of Artichoke and Date recipes this week, so hopefully I'll come up with something one or two of the upcoming weeks!
