Overwhelmed + {Mexican Quinoa Cornbread}

Let's just get this out there right off the bat: I am overwhelmed. I recently cut back on blogging... and honestly, since doing so, I don't even know where to start or what story (or part thereof) that I want to tell.  It was the right choice for me. It is better for my family...for now. We have been dealing with a lot. Babycakes' behavior has been noticeably better and we have enjoyed sweeter moments together, as she's had to compete less for my attention.  And we've had more time to focus on others. And send handwritten notes. ... Read more » about Overwhelmed + {Mexican Quinoa Cornbread}

10 Awesome Greek Yogurt Dessert Recipes

Similar to my strong dislike of spreadable marshmallow goo, growing up I never liked yogurt either. Ewww. It was always too sweet, too watery, or too fake-tasting for me.  So I didn't eat it for almost 30 years!!  But then I discovered greek yogurt: thick, creamy, less sweet, AND packed with protein. And I was hooked!! Of course I like eating it straight from the container (a la spoon).  But, I also started baking/cooking with it -- and found ... {The Best Fruit Dip Ever}

OK, first a confession: I HATE MARSHMALLOWS.  Ewww. Ewww. Ewww.  I don't like them in hot chocolate. I don't like them on sweet potatoes.     I don't even like them browned over a campfire.      (I know, I'm weird.) And I especially don't like them in spreadable jar form.  That is just wrong! Well, I recently saw a fruit dip recipe that called for this spreadable marshmallow goo --- and that's where they lost me.  But, I did start thinking about what I WOULD want to dip my fruit in.  ... Little Miss Personality + {Hawaiian BBQ Sliders}

Most of you have never met my daughter, lovingly referred to as "Babycakes" on this blog. But if you did, you would a) be surprised at how well she can speak -- it is like having a conversation with a little adult, b) be enamoured by her sweetness and genuine concern for others, c) be impressed by the variety of foods she'll put into her mouth and actually swallow (and dare I say, enjoy), d) be shocked at how many times she asks "why?" -- not to be annoying, just because she is genuinely curious and interested in discovering how her environment works and e) wonder where ... I Love Spring + {Bird's Nest Cookies}

Spring was ushered in this week by a blizzard in Denver; though it was much less of an event here in the mountains, ironically.  I don't know about you, but I am a HUGE fan of Spring. I love the longer days. I love the sunlight. I love the snowmelt. I love the flowers. I love the birds chirping. And I love the symbolism of new life and growth.  If you missed yesterday's blogpost, I revealed the start of something new -- the renaming of this blog -- to Nosh And Nourish. ... The Absolute Best (and Healthiest) Key Lime Pie

Ever since Pillsbury posted my Banana Cream Pie Bites to their Facebook page and one of their fans suggested a key lime pie version, I have been a woman on a mission: to make an even more perfect, low sugar, healthier version of this classic dessert recipe.  Perusing the internet only found me "healthy" versions that subbed in low-fat sweetened condensed milk instead of the full-fat version or used jello and cream cheese.   I knew I could do better. First of all... ... Read more » about The Absolute Best (and Healthiest) Key Lime Pie

Repurposing Leftovers + {Tangy Black Bean Dip}

I don't know about you, but I have historically been terrible with leftovers.  I don't mind eating leftovers for work lunches, but Dear Hubby would rather never have to eat the same thing two days in a row. (I think this is part of the reason he loves eating out!) So, to incorporate leftovers into an entirely new meal or repurpose them beyond recognition... well, that's just genius. And I need to do it more. ... Read more » about Repurposing Leftovers + {Tangy Black Bean Dip}

On a Roll + {Blackberry Cucumber Chicken Salad}

This morning Pillsbury shared my Banana Cream Pie Bites with their 2 MILLION fans on Facebook, and quite a few hopped on over to look at the recipe and read a few other blogposts of mine.  Soooooooo, WELCOME to all my new readers/fans! I'm so glad you're here.  I celebrated my one year blogiversary this week, and honestly feel like I am more on a roll than ever before. I am creating so many awesome recipes -- that there are quite a few waiting in the wings to be posted, and even new key lime pie bites (ingredients purchased, cooking tomorrow). ... {Carrot Cake Muffins} - no sugar added

I have been juicing for almost two years now.  I love what it's done for my body - kickstarting my weightloss, killing my sugar cravings completely, and giving me so much extra energy... But I have a confession: for 2 years, I have always put the pulp straight down the drain. This weekend was different though.  For the first time ever, I actually saved the leftover pulp from my "Good Morning Juice" to make into another recipe.  And it was such a success and ... Dating + {Sweet Spaghetti Squash Casserole}

Dear Hubby started wooing me our freshman year of college in Pittsburgh, where we both started school at Carnegie Mellon University.  We met when we were 18 in a class appropriately named: "Interpretation and Argument."  Both good things to learn with a future spouse :)  We both transferred away from that cold, bleak place within a year: Dear Hubby to Texas, me Boulder.  The Univ. of Colorado was such a beautiful and fun place to go to school, with Chatauqua park and the Flatirons just steps away, lively characters on Pearl Street, and a plethora of wonderful restaurants.  ...
