Peach Pie Creamsicles

Ingredients
3 cups Peaches (fresh or frozen, divided)
1⁄2 a sweet potato (cooked, then cooled - approx 3/4 cup)
1⁄4 teaspoon Cinnamon
1⁄3 cup raw cane sugar
1⁄2 cup Silk unsweetened vanilla cashewmilk (divided)
1 tablespoon Dark Amber Maple Syrup
1⁄4 cup Water
1 pint So Delicious Snickerdoodle dairy-free ice cream
1⁄4 cup Water
Instructions
In a high powered blender (I use a Blendtec), combine 1 1/2 cups peaches, 1/2 a sweet potato, 1/4 cup cashewmilk, and cinnamon + sugar. Blend until smooth.
Pour the mixutre into the popsicle mold, filling each cup up 1/3rd of the way to the top. Put the popsicles in the freezer for an hour.
Rinse out the blender, then add in the remaining 1 1/2 cups peaches, maple syrup, and the remaining 1/4 cup cashewmilk and 1/4 cup water. Blend until smooth. Once the bottom orange layer is thoroughly frozen, pour on the 2nd lighter peach only mixture, filling each cup about 2/3rds of the way to the top. Freeze for an hour
Rinse out the blender. Then combine the snickerdoodle ice cream and water. Blend until smooth. Once the 2nd peach layer is thoroughly frozen, pour on the lightest top layer, filling each cup all the way to the top. Put the popsicles in the freezer for two hours... then, devour!
ALTERNATIVELY, if you don't need/want the layers, just blend all the ingredients together at the start!
