Slow Cooker *Mostly* Vegan Zuppa Toscana

I really have to laugh at myself for this one.  I was so excited about my new plan: to cook more vegetarian meals to help Dear Hubby get more vegetables and less animal fats/proteins per the doctor's orders!  I went to the market and bought a bunch of weird new foods (ha!) - cheese that's not really cheese, meat that's not really meat, and a whole host of new veggies and fruit to stock my fridge.  I thought long and hard about what my first vegetarian meal would be that I wou ... Pretty Please...With a Cherry on Top

If you missed yesterday's post where I told you I'm going to embrace my inner vegetarian, it's worth the time to go back and read. It is going to be a bit of a transition for us, but we are able, ready, and excited.  Last night I made my first truly vegan meal, inspired by the Olive Garden's Zuppa Toscana!  I will be sharing that recipe with you tomorrow.  It was delicious, a perfect medley of flavors, and packed full of good veggies: 4 cups of kale, 2 russet potatoes, and veggie/grain "sausages." But back to today...cherries and please.  ... Read more » about Pretty Please...With a Cherry on Top

Eat More Veggies + {Peach, Pepper, & Bean Chutney}

I hope you already saw/read/entered to win yesterday's Monday Giveaway post about the gluten-free, veggie-packed "Better Chip."  If not, stop and do it now!  In preparing to do the review and taste test, I put together a number of dips/sides to accompany each chip flavor: like roasted red pepper hummus for the Red Pepper and Salsa fresca version, cranberry goat cheese & cherries for the Sweet Onion and Cheddar version, etc...I was able to be a bit more adventurous with the flavors for the "plain" Fr ... Bourbon Tilapia w/Baked Sweet Potatoes & Peaches

I hope you all had a lovely 4th of July!  We relaxed at home, splashed around in the sprinklers, and enjoyed a bbq with the fam.  We had some out-of-town guests come over Tuesday night, in town for the holiday, so I made a SECOND batch of this wonderful recipe that I'm going to share with you today! I doubled the recipe: 3 casserole dishes overflowing with sweet potatoes, peaches, and tilapia...and by the end there was literally not one bite left.

Lemon Blackberry Grilled Cheese

If you've spent much time on this blog you know I don't like added sugar, I do like cooking with Greek Yogurt (especially breads!), and I love teaching my darling toddler about living the happy healthy life.  Another theme seems to be emerging though...a deep found love for grilled cheese.  First I made this Smashed Blackberry Grilled Cheese after I saw a mouth-watering picture on Pinterest.  Then I made this Strawberry Pesto Grilled Cheese. ... Homemade {No Sugar Sloppy Joes}

Whenever I think of sloppy joes, I think of Adam Sandler and start singing:  Sloppy Joes, sloppppppppppy, sloppy joe yeeeeeeah. Besides being a catchy tune, it's an American favorite made popular by Manwich.  Dear Hubby loves sloppy joes (though he doesn't love messes, so I make sure not to make his sandwich too overflowing/sloppy...ha!).  Well for too long I've actually bought those easy cans of Manwich sauce, but no more!

7 Low Sugar Tips Anyone Can Adopt

First, I'd like to reiterate something I said yesterday on Facebook.  If you're not yet a fan, go ahead and "like" me because there's lots of additional conversations, photos, and questions that never make it on to the actual blog!  I started a devotional plan yesterday - 35 days of a bit of Bible plus a story / message that goes along with it.  I've "wanted" to be a consistent reader (of the Bible) in the past, but haven't made it a habit.  Then I ...
