Chipotle Cheesy Corn Dip
15 ouncesOrganic Sweet Kernel Corn
1⁄3 cupDiced Green Chiles (I used mild)
1 cupPlain greek yogurt
2 cupsPepper Jack Cheese
1⁄2 teaspoonSea Salt
1 tablespoonSweet Cherry Peppers, diced (I used the kind from a jar)
1 tablespoonChipotle Peppers, diced
- Preheat oven to 400 degrees.
- Mix all ingredients together in a medium mixing bowl.
- Use non-stick spray to coat the inside of a pie pan. Pour cheesy mixture into pan. Bake for 30 minutes or until lightly browned on top.
