This Spring White Bean Dip with crudites will become your new go-to party appetizer this Spring! It's easy to put together, totally vegan, and such a crowd-pleaser!
What exactly is a crudite (or crudité), you ask?
Well, it's basically an assortment of fresh veggies coarsely chopped and ready to be dipped into something fabulous. For this snack board, I went with a purple + yellow theme:
purple (red) cabbage
purple grapes
purple rainbow carrots
yellow bell peppers
purple cauliflower
purple daikon radishes
watermelon radishes
You can get everything you need for this fabulous Spring white bean dip at your local Sprouts Farmers Market: house-branded tahini + beans, So Delicious® Dairy Free Unsweetened coconutmilk (the vanilla or plain will work), veggies, lemons, and spices. You know what else you can get there? Gorgeous Spring blooms! They have a beautiful selection of fresh flowers (and even some potted ones) as well as fresh herbs.
The dip has a rich nutty flavor from the pine nuts, is uber creamy because of the So Delicious® Dairy Free coconutmilk, and is full of fiber from the white cannellini beans + roasted daikon radish. It's topped with toasted sesame oil and black sesame seeds.
In addition to the crudites, I added some almond flour crackers and lentil turmeric crackers for dipping. Feel free to use whatever you have on hand. These boards are perfect for mixing and matching and using up whatever you have in the fridge or pantry.
I also added a simple fig jam to the mix, as I like to have an assortment of dips.

Spring White Bean Dip with Crudites
Ingredients
1⁄2 cup pinenuts
1 roasted daikon radish
15 ounces white cannelini beans (rinsed and drained)
1⁄3 cup So Delicious Dairy Free Coconutmilk
1⁄4 cup Sprouts tahini
2 tablespoons Sesame Oil
juice from 1/2 a lemon
1 teaspoon lemon pepper
1 teaspoon granulated monkfruit (or sub raw cane sugar)
1⁄2 tablespoon Minced Garlic
1 teaspoon Lemon Zest
black sesame seeds (for topping)
addtl sesame oil (for topping)
Notes
Serve with crackers and vegetables: watermelon radish, turmeric lentil crackers, daikon radishes, purple cauliflower, yellow bell pepper, purple cabbage, and almond flour crackers. Feel free to use whatever you have on hand!
Instructions
Combine all dip ingredients into a food processor. Blend until smooth. If it's too thick, add a bit more coconut milk slowly.
Serve with crudites (raw veggies + crackers). See above for some ideas.
