Roasted Peach Waffles with Homemade Honey Butter

Ingredients

  ---FOR THE HONEY BUTTER---
6 tablespoons unsalted butter (room temp)
2 tablespoons honey
1⁄2 teaspoon celeyon cinnamon
  pinch Sea Salt
  ---FOR THE WAFFLES---
4 large, ripe peaches
1 tablespoon Coconut Oil
1 teaspoon Cinnamon
1 cup Whole Wheat Pastry Flour (we love @bobsredmill)
1 cup all purpose flour
2 tablespoons raw cane sugar (optional -- feel free to omit if you don't like things as sweet)
1 1⁄2 teaspoon Baking Powder
1 teaspoon Baking Soda
1⁄2 teaspoon kosher salt
4 Eggs
2 cups buttermilk (or sub your milk of choice)
1⁄2 teaspoon Pure Vanilla Extract
2 tablespoons unsalted butter (melted)
  maple syrup for topping (optional, to taste)

Instructions

To make the honey butter:

  1. Combine all butter ingredients in a small dish and mix together until well combined.
  2. Place in fridge to firm back up some and then enjoy on waffles, or whatever else your heart desires! 

To make the waffles:

  1. Pre-heat oven to 375 degrees.
  2. Cut peaches into small pieces and place on a baking sheet in a single layer. Toss with coconut oil and several sprinkles of cinnamon. Roast for approx. 30 min, until peaches are softened and caramelized, flipping a couple times throughout cooking time. *optional: cut some into full slices, for garnish
  3. While peaches are roasting prepare your waffle batter… In a large mixing bowl combine your flours (both), sugar (if using), baking powder, baking soda and salt. Whisk your dry ingredients until well combined. Set aside.
  4. In a separate mixing bowl, combine the following: eggs, buttermilk, vanilla extract and butter. Stir until well combined.
  5. Next, add the wet ingredients to the dry and mix until everything is just combined and there are no large clumps. No need to overmix! Set batter off to the side for approx. 10 minutes.
  6. While batter is sitting, start up your waffle maker. We have a couple different sizes, but used this one for this recipe.
  7. Add 1/2 of your roasted peaches directly to the batter and just barely mix it in.
  8. Pour waffle batter into your waffle maker once it is ready to go and cook according to the manufacturer’s instructions. I cook mine until the outside of the waffles are just a little crispy, in spots as shown.
  9. Remove waffle from maker and repeat until all batter is used. *this recipe makes approx. 7 waffles
  10. Plate waffles and top with a scoop of the remaining roasted peaches, honey butter,  additional cinnamon, and/ or other topping as desired.
  11. Enjoy immediately.
