Apple Cinnamon Muffins

Ingredients

1 golden delicious apple (peeled and finely diced)
2⁄3 cups apple butter (try to find one without HFCS!)
1 teaspoon Vanilla
1 Egg
1⁄3 cup Silk Vanilla Almondmilk
2⁄3 cups Coconut Sugar
1 1⁄2 teaspoon Cinnamon
1 1⁄2 cup Unbleached All-Purpose Flour
1 teaspoon Baking Powder
1⁄2 teaspoon Baking Soda
1⁄2 teaspoon Sea Salt
2 tablespoons Coconut Sugar (for granola topping)
1 teaspoon Cinnamon (for granola topping)
2 tablespoons Apple Crisp Protein Granola (for granola topping)

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine all wet ingredients in a large mixing bowl: diced apple, apple butter, vanilla, egg, almondmilk, cinnamon, and coconut sugar. Stir thouroughly.
  3. Add in dry ingredients: flour, baking powder, baking soda, and sea salt.
  4. Fill greased muffin cups with the batter 3/4s full.
  5. Combine the granola topping ingredients in a small bowl: sugar, cinnamon, and granola.
  6. Use a spoon to top the batter with the granola topping. Gently press it into the batter with the back of the spoon.
  7. Bake for 20 minutes, or until cooked through and lightly browned.
