Yogurt Parfaits with Strawberry Chia Jam

Lexi and Beth from Crowded Kitchen here again with our second recipe! This beautiful yogurt parfait is one of those no-recipe recipes; you can truly make it as easy or as difficult as you’d like.

It’s been a loooong, cold winter here in southwest Michigan, so needless to say, we’re anxiously awaiting Spring and all of our favorite produce that comes with it. Our spring favorites list includes: rhubarb, asparagus, radishes, ramps and peas, and of course strawberries, which are at peak season a bit later in the year. We were lucky to find some really fresh, juicy strawberries this week at our local store, so we couldn’t pass up the opportunity to add them to this parfait! Rhubarb would be an excellent seasonal addition to the jam recipe we’ve included below. If you’d like to try it, simply replace half of the strawberries with diced, fresh rhubarb.

Yogurt parfaits are, in my opinion, one of the best snack (or breakfast) options out there. They’re super easy to throw together, and you can customize them --- choosing the yogurt, jam, fruit, and granola to include. Use whatever type of yogurt you'd like: Greek, Siggi's, Silk almondmilk yogurt alternative, or even homemade!

Then choose your granola. We often make granola homemade, but since we just returned from a 2 week trip to California, we picked up a bag of strawberry granola from the store and it was perfect. If you’re feeling extra ambitious, give our Chocolate Hazelnut Raspberry Granola a try! Same concept goes for the jam - you can easily use your favorite store-bought brand, but this homemade strawberry chia jam is surprisingly simple and fuss-free!

When it comes to composing the perfect parfait, we suggest a layer of jam + granola at both the top and bottom of the jar. That way, you’ll be sure to get an even amount of crunch and sweetness with each bite. See ya next time - we hope to report back with warmer weather and sunnier skies!

Yogurt Parfait with Strawberry Chia Jam

Description

Easy Yogurt Parfait with Homemade Strawberry Chia Jam

Ingredients

1 cup Diced Strawberries (fresh or frozen --- for the jam)
2 teaspoons honey (for the jam)
3 tablespoons Chia Seeds (for the jam*)
1 cup vanilla yogurt (Greek, Siggi's, or Silk will work)
2 fresh strawberries (sliced)
1⁄4 cup granola (of choice)
1 teaspoon honey (for drizzling)

Notes

*the jam ingredients will make more than you need in your single parfait. Store the rest in an air tight container in the fridge for up to 10 days.

Instructions

To make the jam:
Add washed & sliced strawberries to a small saucepan over medium heat. Stirring often, bring to a simmer and add the honey. Lightly mash the strawberries until you reach your desired consistency. Remove from heat and stir in chia seeds. Let sit until cooled. Store in the refrigerator for up to 10 days.
To make the parfait:
Spread a generous layer of the chia jam at the bottom & sprinkle with half of the granola. Add all of the yogurt, then top with more jam, granola, fresh strawberries and a drizzle of honey. Enjoy!
