Hey Nosh and Nourish readers! Lunches + Littles here with another recipe. This one is so easy and good - a low-calorie Banana Split in a Pint that is sure to sweeten up your summer days!

Have you heard of Scandal-less Ice Cream by Open Nature®? When we spotted this ice cream the other day we knew we had to try it out. But… Which flavor to choose? Oh my, there are so many good ones!

The amazing thing about Scandal-less is that you are eating an ice cream with less calories (40-50% less than regular ice cream), less fat (60-80% less than regular ice cream!) --- and all without sacrificing the great taste you look for from a frozen treat.

But here is the thing: as much as we love our homemade treats, we know that sometimes you just want to treat yourself without having to work too hard. You feel us? And, I’ll be real honest; we have tried several other low-calorie ice creams before which have left an aftertaste and required you to sit the pint out for 10 minutes or more to soften the ice cream prior to serving. However, Scandal-less from our experience, has none of the after-taste and is surprisingly easy to eat out of the pint, straight from the freezer.

Banana Split in a Pint

Ingredients

1 pint Open Nature Scandal-Less Ice Cream (use whichever flavor you love -- we love it with either Vanilla or Sea Salt Caramel)
1⁄2 Banana (sliced)
4 Strawberries (cut in half or sliced)
1⁄4 cup pineapple chunks
2 Rainier cherries
1 tablespoon chopped nuts
1 small chocolate square (Ghiradelli or equivalent, shaved/grated)

Instructions

  1. Remove your Scandal-less Ice Cream pint from freezer.
  2. Scoop 1- 2 small scoops off to the side of your pint (still inside), to make room for toppings.
  3. Then, load it up with banana slices, pineapple, strawberries, cherries, chocolate shavings and nuts.
  4. Enjoy right from the pint! Yum!! 

*Just for fun, for my kiddos, I added some broken up pieces of cone to the mix too, which was a fun addition! Next time you are at Safeway be sure to pick up a pint (or five!) of Scandal-less Ice Cream by Open Nature! It’s a great choice, and has a price point that can’t be beat!
