Lunchbox with Tomato Soup and Grilled Cheese Stars

Ingredients

1 Flatout FoldIt (I used white, but they come in many flavors)
1 slice organic American square cheese
1 bunch organic thinly sliced chicken deli meat (or sub turkey)
1 slice Muenster Cheese (or just use American for both slices)
1 tablespoon Butter (for grilling the sandwich)
1 cup organic tomato basil soup*
4 Strawberries (sliced)
1⁄2 a peach (sliced)
2 yellow carrots (cut into thin strips)

Notes

As for the tomato soup, you can make the roasted red pepper tomato soup from my newest cookbook, or go even simpler like I did here and use a single serve boxed organic tomato soup (this one is our fav).  

Instructions

  1. To make the grilled cheese, lay the FoldIt flat. Put the slice of American cheese on one side and the Muenster cheese on the other. Put a few pieces of deli chicken on top of the American slice. Then, fold it. 
  2. In a medium skillet over medium heat, melt the butter. Then, saute the sandwich on one side for approximately 2 -3 minutes until golden brown. Flip over and repeat on the other side. Cheese should be melted. 
  3. Cut into stars with a cookie cutter, or even simple strips for dipping. 
  4. Assemble the lunchbox: heated tomato soup, grilled cheese shapes, strawberries, peaches, and carrots.
