Holiday Bark w/Toasted Quinoa


20 ounces Dark Chocolate chips/cocoa nibs
1⁄4 cup Quinoa (rinsed, then toasted)
1⁄4 cup Pistachios (crushed)
1⁄4 cup Dried Mediterranean Apricots (diced)


The Chocolate Chips were made by a brand called "Enjoy Life"


  1. Preheat the oven to 400 degrees.
  2. Rinse your quinoa thoroughly until water runs clear.
  3. Lay out the quinoa on a baking sheet (lined with parchment paper). 
  4. Toast them in the oven for 10 minutes.
  5. Crush your pistachios (I did this in a ziploc bag).
  6. Dice your apricots.
  7. Melt the chocolate chips over a double boiler, or use two stock pots like I did. Put water in the bottom one, the chocolate in the top. 
  8. Stir frequently.
  9. Once it is just about all the way melted/smooth, remove from heat and stir in the toasted quinoa.
  10. Then, pour the chocolate mixture flat onto a parchment lined cookie sheet.
  11. Spread flat with a spoon or spatula.
  12. Sprinkle pistachios and apricots evenly onto chocolate.
  13. Gently press the toppings into the chocolate.
  14. Put in the fridge for at least 2 hours. 
  15. Then break into pieces and enjoy!
