Summer Tabbouleh | No Sugar Sweet Life

Ingredients

2 cups Parsley (diced)
4 Roma Tomatoes (diced)
3⁄4 cups Sweet Corn
1 tablespoon Chives (diced)
1 teaspoon Garlic (minced)
1⁄4 cup Olive Oil
2 Lemons, squeezed (juice only)
  Salt & Pepper (to taste)
  A sprig or two of mint (chopped)

Instructions

  1. Dice parsley, tomatoes, & chives.
  2. Combine everything in a small mixing bowl.
  3. Serve with pita chips, or eat as a side dish.
