Blondie Brownies


Nosh and Nourish: Holiday Blondie Brownies with Cranberries, White Chocolate, and Walnuts. #glutenfree #vegan


8 tablespoons Earth Balance Vegan Butter
1 cup Chickpeas
1⁄2 cup Vanilla Almond Milk
3⁄4 cups Coconut Sugar (can sub light brown sugar)
1 1⁄2 cup Brown Rice Flour (can sub all-purpose flour)
1 teaspoon Baking Powder
1 cup White Chocolate Chips (to keep this recipe vegan, use vegan choc chips)
1⁄3 cup Chopped Walnuts
2⁄3 cups Dried Cranberries


  1. Preheat the oven to 375 degrees.
  2. Combine the chickpeas and almond milk. Then use an immersion stick blender to puree.
  3. Combine all ingredients except for choc chips, walnuts, and cranberries in a medium mixing bowl & mix batter thoroughly. 
  4. Stir in the choc chips, walnuts, and cranberries gently. 
  5. Use non-stick spray or coconut oil to coat a baking dish. Then spread the batter into the dish evenly. 
  6. Bake for 45 minutes, or until lightly browned.

Yields 15 Brownies
