Cutting Back + {Black Bean Quinoa Sliders}

I received such a sweet comment from a new reader recently: "Hello there! I came across Nosh and Nourish through Pinterest (someone pinned your amazing butternut squash mac and cheese, yum!) and now that I've navigated through your website, I wanted to say that you are amazing, inspirational and beautiful on the inside and out! I'm looking forward to keeping up with your adventures. <3" which makes what I'm about to say even harder:  It is time for me to cut back significantly for a season. I love blogging so much!! ... B is for Beets + {Chili Roasted Beet Chips}

A is for Apple. B is for Beets. C is for Carrots. D is for... We have been teaching Babycakes the alphabet (with veggies and fruit), her numbers (she can count to about 13 right now...though she likes to skip 3), and three dimensional shapes (like sphere, ovoid, cube, etc). But, outside of what we "teach" her, her mind is constantly figuring out new things, discovering how things work, and wondering WHY things happen.  She says the cutest, funniest, and most thoughtful things almost daily. I really should write them all down and then publish a book! ... Read more » about B is for Beets + {Chili Roasted Beet Chips}

Healthy Substitutions + {Veggie Fried Quinoa}

I am now in the habit of making healthy substitutions for my family. If I can keep a similar taste but include better-for-us ingredients, then I'm all in!! Some recent examples include my healthy key lime pie, my double-decker tacos, and my Zuppa Toscana. And with my father-in-law's recent heart attack, Dear Hubby has been even more willing to try new things in the name of better health.  I haven't changed everything all at once, but am slowing making over some of our favorite dishes. ... Meatless Monday + {Kale & Corn Hash}

Yes, I realize it's not actually Monday and that it is now Tuesday. But, I wanted to take a minute to talk about this nationwide (worldwide?) phenomenon called "Meatless Monday."  It's growing in popularity and scope - and maybe not for the reasons you think.  Why I like participating: 1) It saves my family money.  Meat is expensive, especially if I try to keep it organic, so going vegetarian at least one day a week helps my grocery budget significantly! 2)  It's good for us! ... Dabbling with Vegetarianism

First of all, let me preface this with: I am NOT a vegetarian.  I am dabbling with vegetarianism. There’s a huge difference!  I am not doing this for emotional reasons or based on a belief system about why the animal / meat industry is bad. I am doing this for health reasons…and because my doctor suggested it. ... Read more » about Dabbling with Vegetarianism

Homemade Vegetarian Double Decker Tacos

We don't frequent Taco Bell, and as I mentioned in this post, Dear Hubby doesn't really like Mexican food.  But he LOVES their double decker tacos.  Crunchy layered goodness! So when brainstorming my next vegetarian meal attempt, these came to mind.  I saw the MorningStar Farms' Crumbles at Walmart and put them right into the basket.  These would be my base.  I bought a bunch of other veggies that I thought I could easily disguise, like a frozen veggie combo pack of corn, black beans, red peppers, and onions and a bag of fresh broccoli "slaw" ...
