Yes, I realize it's not actually Monday and that it is now Tuesday. But, I wanted to take a minute to talk about this nationwide (worldwide?) phenomenon called "Meatless Monday." It's growing in popularity and scope - and maybe not for the reasons you think. Why I like participating: 1) It saves my family money. Meat is expensive, especially if I try to keep it organic, so going vegetarian at least one day a week helps my grocery budget significantly! 2) It's good for us! ... Well it looks as though I've had my first ever blogging snafu in one year of blogging :) I scheduled this post to go live Monday morning but then had too much fun baby-free yesterday that I never finished it. The Holiday season is in full swing, and with it comes a full range of emotions, especially when it comes to eating, weight, and guilt. Would you believe me if I told you it snowed inches upon inches last night in Denver and that Babycakes and I went sledding this morning?! Some of you probably woke up to nice 80 degree weather. Us, not so much. But, it was the first ever workday snow that I didn't have to commute in, and let me tell you...it was soooooooooo nice to be able to stay in, look at the pretty snow, enjoy some warm maple oatmeal, and think about sledding once the sun warmed things up a bit! As mentioned in yesterday's confessional (aka. freak out post), I described feeling unsatisfied with the photography of today's recipe. While that feeling remains, the yumminess factor of this meal will hopefully shine above all else. Oh yeah, and the simplicity. Since losing over 50 pounds in the last year, my wardrobe has shrunk - both figuratively and literally! It made getting the house ready to sell pretty easy: the walk-in closet was mostly empty. But I really need some new items, desperately. Since my mom was here to help me pack, she also took me (and Babycakes) shopping. Don't you just LOVE moms?!?!?!? Not gonna lie... I'm enjoying some good ol' comfort food tonight. And no, I don't consider kale chips comfort food!! We're talking about a crunchy peanut butter and honey sandwich with a small glass of milk. So delicious. And totally hits the spot when I'm craving something sweet, salty, and like a bear-hug-on-a-plate. It's been a rough couple of days. The short of it is...we're still moving in 14 days.
