No Bake Vegan Key Lime Pie Parfaits

8 ounces
dairy-free cream cheese
21 ounces
So Delicious Key Lime Coconutmilk Yogurt Alternative (= 4 containers)
2 tablespoons
Key Lime Juice (or sub regular lime juice)
4 tablespoons
organic sweetened condensed coconutmilk
9 ounces
So Delicious CocoWhip (= 1 container)
6 1⁄2 ounces
organic lemon drop cookies (= 1 box, or sub graham crackers... but most are not vegan b/c they contain honey)
4 teaspoons
Melted Coconut Oil


To make each individual parfait:

  1. Crush (or muddle) 6 lemon drop cookies in a small wide glass.
  2. Stir in 1/2 tsp melted coconut oil
  3. Then muddle it again so that the top is flat and condensed. 
  4. Top with 1/2 cup of the key lime pie filling.
  5. Add a large dollop of CocoWhip on top.
  6. Garnish with lime zest and one additional cookie (optional).

Yields 8 Servings
