Superfood Spinach Salad

Superfood Spinach Salad w/Roasted Sweet Potatoes

Ingredients

1  
small sweet potato (peeled)
1 tablespoon
lime juice
1 teaspoon
Paprika
6 cups
organic baby spinach
1 cup
Cooked Quinoa
1  
Avocado
1⁄3 cup
Grape Tomatoes (sliced)
2 tablespoons
Olive Oil
1 tablespoon
lime juice
1⁄4 teaspoon
Paprika
   
salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Peel and dice sweet potato into small cubes. In a medium bowl, toss the sweet potato with 1 tbsp lime juice and paprika. 
  3. Lay the sweet potato pieces flat on a baking sheet lined with parchment paper. Bake for 20 minutes or until lightly browned. 
  4. Just before the sweet potatoes are done, combine all other salad ingredients in a large mixing bowl. 
  5. Stir in sweet potatoes and serve!
