Caprese Turkey Burgers

Ingredients

1 pound lean ground turkey
1 tablespoon Italian seasoning
1 plain Rice Cake (crumbled)
1 Egg
  Salt & Pepper to taste
5 whole wheat buns
1 large tomato (sliced)
1 large ball of Mozzarella cheese
1 cup Basil Leaves
1 teaspoon Balsamic Vinegar

Instructions

For the turkey patties:

  1. Preheat oven to 375 degrees F.
  2. Combine turkey, Italian seasoning, rice cake, salt and pepper in a large bowl.
  3. Add in egg and stir until well combined.
  4. Using your hands form meat into 5 patties by rolling into balls and flattening.
  5. Line a baking sheet with parchment or a silicone mat and place patties on top, spread out.
  6. Bake for 15 minutes on center rack.
  7. Remove from oven and flip over. Bake for another 15 minutes.

For the burgers:

  1. Toast burgers if desired.
  2. Slice tomato into five slices.
  3. Slice mozzarella into 5 slices.
  4. Place 1 slice of mozzarella on top of each patty and place back into the oven for 2 minutes to melt the cheese.
  5. Meanwhile drizzle balsamic onto one side of the bun.
  6. Remove burgers from oven and place onto bun. Top with a slice of tomato and several slices of basil.
  7. Serve warm.
