Quinoa Bruschetta
Description
Quinoa Bruschetta // via Nosh and Nourish
Ingredients
1 cup Cooked Quinoa (I used red)
1 tablespoon Basil Paste (the tubes are found in the produce section)
2 teaspoons Minced Garlic
2 teaspoons WHITE Balsamic Vinegar
4 Tomatoes (Diced)
1 teaspoon Coconut Sugar
2 teaspoons Olive Oil
Salt & Pepper to taste
1⁄4 cup Parmesan Cheese (or sub Daiya Mozzarella shreds to keep it vegan)
Instructions
Mix all ingredients together in a small mixing bowl.
Serve with gluten-free bagel chips, or sliced french bread.
