Driscoll's Berry Giveaway + {Berry Cobbler w/Kahlua}

I love it when great things happen without even trying.  It reminds me of one of my favorite quotes by Maya Angelou--- "You can only become truly accomplished at something you love. Don't make money your goal. Instead, pursue the things you love doing, and then do them so well that people can't take their eyes off of you."      I love blogging. I love creating nourishing recipes. I love photographing beautiful food. And it seems people are noticing. Recently Driscoll's reached out to me after they saw my Strawberry Pesto Pizza recipe online, and asked if I'd be interested in creating a new recipe using their berries to pair with a giveaway.  Without hesitation, I said yes!

Introducing {Berry Cobbler} with a Kahlua reduction sauce:

Simmering the berries in a mixture of Kahlua, coconut sugar, and vanilla brings such a unique taste to this dessert.  Any possible tartness from the berries is wiped away and replaced with a smooth, rich, sweetness.

And what makes this dessert so fabulous (besides the Kahlua, of course...LOL)?  The Driscoll's Berries!       I used 6 cups of assorted organic berries: strawberries, blueberries, blackberries, and raspberries!

Top with a generous scoop of french vanilla ice cream, and you will instantly arrive at dessert bliss.

Filled with antioxidants and nourishing add-ins, you don't even have to feel guilty about taking another bite.

Description

Berry Cobbler w/a Kahlua reduction sauce // via Nosh and Nourish

Ingredients

6 cups Berries (I used strawberries, blueberries, blackberries & raspberries)
1⁄8 cup Water
1⁄8 cup Coconut Sugar (or sub light brown sugar)
1⁄8 cup Kahlua
1 teaspoon Vanilla
1⁄2 tablespoon honey
1⁄8 cup Cornstarch
1 cup Whole Wheat Pastry Flour (I use Bob's Redmill)
3⁄4 cups Oat Flour (I use Bob's Redmill)
1 Egg
1⁄2 cup Coconut Oil
1 teaspoon Baking Powder
1⁄2 cup Coconut Sugar

Instructions

  1. Combine the cobbler dough ingredients in a medium mixing bowl: whole wheat pastry flour, oat flour, egg, coconut oil, baking powder, and coconut sugar.
  2. Allow dough to harden slightly by putting it in the fridge for one hour.
  3. Once dough is done, preheat the oven to 350 degrees.
  4. Combine the berries, water, 1/8 cup coconut sugar, Kahlua, and vanilla in a medium stockpot.
  5. Simmer covered for approximately 8 minutes, stirring occasionally.
  6. Pour the berry mixture into a deep baking dish.
  7. Spoon off large chunks of the cobbler dough and place them over the berries, leaving some areas uncovered. 
  8. Bake for approximately 50 minutes, or until dough is completely cooked and slightly brown.
  9. Serve with a scoop of vanilla ice cream!
