Meatless Monday + {Kale & Corn Hash}

Yes, I realize it's not actually Monday and that it is now Tuesday. But, I wanted to take a minute to talk about this nationwide (worldwide?) phenomenon called "Meatless Monday."  It's growing in popularity and scope - and maybe not for the reasons you think.  Why I like participating: 1) It saves my family money.  Meat is expensive, especially if I try to keep it organic, so going vegetarian at least one day a week helps my grocery budget significantly! 2)  It's good for us! Digesting meat is harder for our bodies than other foods, so taking a break even just once a week gives your digestive system a well-deserved rest. and 3) It can be tasty! Believe it or not there are actually some really awesome, filling, hearty vegetarian meals out there... like this one I'm about to share.

Introducing Kale & Corn Hash:

Full of good-for-you things like 4 cups of kale, sweet kernel corn, lentils, and garlic, this vegetarian meal was gobbled up by both my veggie-hating hubby and Babycakes.

It features one of Progresso's new "Recipe Starters," Creamy 3 Cheese, which sounds and tastes more decadent than the mere 60 calories per serving. This meal is easy and quick, perfect for a weekday dinner.

And here's a pic of the baby kale cooking in the skillet. The baby kale is a bit more spinach-like than regular kale.

Serve it over scrumptious Pillsbury biscuits, and voila:

A vegetarian "Meatless Monday" meal that can be enjoyed any day of the week!!

Description

Kale & Corn Hash | No Sugar Sweet Life

Ingredients

4 cups Kale (chopped)
2 cups Sweet Kernel Corn
2 cups SooFoo, cooked (Or Substitute 1/2 brown rice, 1/2 lentils)
2 tablespoons Minced Garlic
1 can Creamy 3 Cheese Recipe Starter (by Progresso)
1⁄2 cup Milk
1 package Pillsbury Biscuits (I used the Southern Homestyle variety)

Instructions

  1. Cook biscuits according to directions.
  2. Saute kale for 4 minutes in some olive oil, covered.  Stir in garlic.
  3. Blend kale with an immersion blender, slowly adding creamy 3 cheese sauce.  Return to skillet.
  4. Add in remaining ingredients.
  5. Cook over medium heat for an additional 8 minutes, stirring frequently.
  6. Serve over biscuits.

Yields 5 Servings
