My Little Helper + Slow Cooker {Chicken Corn Chowder}

Honestly, I don't remember ever spending much time in the kitchen growing up. Or grabbing a stepladder or chair to get closer to the action. Maybe because of this, or maybe just because... I always hated cooking. For my entire 20s, and into my 30s: Hated it.  And then something happened -- I realized I liked being creative in the kitchen. It wasn't the cooking itself I hated, it was following recipes.  I was being held back by the list of ingredients on the page. I wasn't able to be myself. And I wasn't able to enjoy it.  I've been so blessed to be able to have this blog as an outlet for my creativity, not only with the recipes but also with the photography.  THANK YOU for taking the time to read my words, share my life, and cook my creations!  I now want to share this love and this passion with Babycakes too so that she has a wonderful experience with food and the kitchen in general.

She is my little helper.

She constantly wants to help now, with anything and everything I'm doing...and I am having to choose to allow opportunities for messes, fails, falls, tardiness and just overall chaos in the name of fostering her curiousity, her desire, and her own creativity.  All within reason folks: no knives, hot stoves, or dangerous liquids for my little miss. But, stirring, transporting, washing or mixing, you betcha!!  Here she is transporting the cubed sweet potatoes into the slow cooker:

Introducing Slow Cooker Chicken Corn Chowder:

Packed with sweet potatoes, carrots, corn, and tomatoes, this soup is just as healthy as it is hearty.

This really was one of my favorite slow cooker soups, coming in a close second to the Zuppa Toscana. :)  The good thing about winter in Colorado is that there's plenty of days where warm soup sounds amazing!

Description

Chicken Corn Chowder // @noshandnourish

Ingredients

1 pound Chicken (cooked and shredded)
1 Sweet Potato (cubed)
2 cups Frozen Corn
6 ounces Chobani Plain Greek Yogurt
2 Carrots (sliced into thin rounds)
13 ounces Diced Tomatoes
2 tablespoons Nutritional Yeast
2 tablespoons Cornstarch
32 ounces Chicken broth
1 cup Cheddar Cheese
1 tablespoon Montreal Steak Seasoning (or your favorite chicken seasoning)
1 teaspoon Salt (optional)

Instructions

  1. Combine all ingredients in a slow cooker.
  2. Cook 4 - 6 hours on high.
  3. Serve with provolone toast (optional).

Yields 6 Servings
