Thanksgiving Side: {Tangy Green Bean Casserole}

This is the last day in the healthier Thanksgiving series that I embarked on this week.  It sure was fun to create all these new healthy dishes for you and your families to enjoy!  Like I said at the beginning, you don't have to use all of them, but just subbing in one of these healthier versions instead of the traditional will help you not to overdo it on Turkey-day :)  I'd love to hear which ones you actually cook, so be sure to email me or leave a comment afterwards!  Before making this dish, I felt as though green bean casserole was only invited to the big meal because of its green color and perceived "healthy" factor. Nothing else in the Thanksgiving meal is green...and I kinda think that's ok!  BUT, after making this different tangy version, I think it's a nice balance to the other flavors on the plate.

Introducing Tangy Green Bean Casserole:

Featuring green beans (duh), a creamy 3 cheese sauce, Chobani plain yogurt, and spicy brown mustard....then topped with sliced almonds and nutritional yeast. 

I loved that I could just put the frozen green beans straight into the casserole and into the oven.  This meal had about 3 minutes of prep work and that was IT!  You'll notice there are no onions in this recipe. No crunchy fried onions on top. No diced onions inside. No grilled onions as garnish. No onions.  Because Dear Hubby hates onions. If you feel the need to add some, please do!

An hour later, creamy tangy green goodness emerged from the oven...onto a spoon...and into my mouth.

Calories = 104; Fat = 5.2; Carbs = 9.1; Sugar grams = 3; Protein = 4.1; Fiber = 2.6; WW Points = 2;

Tangy Green Bean Casserole

Description

Tangy Green Bean Casserole || No Sugar Sweet Life

Ingredients

18 ounces
Can of Progresso Recipe Starter - Creamy 3 Cheese (could sub can of mushroom soup)
1 tablespoon
Spicy Brown Mustard
1⁄4 cup
Plain Chobani (could sub sour cream)
4 cups
Green Beans (frozen or fresh)
1⁄2 cup
Sliced Almonds
1 tablespoon
Nutritional Yeast (also called "Nooch")

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a large mixing bowl, except the nutritional yeast.
  3. Pour everything into a 13 x 9 casserole dish.
  4. Bake for an hour, stirring partway through.
  5. Top with nutritional yeast and a few extra almond slices.
  6. Serve and enjoy!

Yields 8 Servings

Looks so good. I want this all now!! I wish I didn't have to work on Thanksgiving :-/... The joys of being a nurse. I will still enjoy leftovers though!! I don't want to get ahead, especially since you are probably tired from making all of this, but... thinking of any nice, low-sugar cookie recipes for Christmas? I remember the post when you substituted the cookie recipe to the point of lovely, homemade dog biscuits (teeheehee). Even with sugar, whatever I bake tastes like dog biscuits, haha. I am working on it :)

Which is WHY I don't have any posted cookie recipes!!! I was hoping no one would remember that :) I will work on something though, for Christmas. I know Babycakes will enjoy decorating some low-sugar "sugar cookies". :) Have a great Thanksgiving JoAnna! What exactly is the purpose of the nutritional yeast? Is that what makes it tangy? Is it absolutely necessary? I just have an odd hang up with the idea of putting yeast and green beans together, but it looks delicious! Great job again, Kelly!

It's optional, Francesca. I just added it because it adds a bit of a nutty flavor/topping in addition to the almonds. You could use the more traditional fried onions or some other crunchy topping.
