Spilling the beans + {Slow Cooker Pork & Beans}

Well, it's time for me to not only cook the beans, but to spill them too: I've joined the ranks of working moms again...part-time! I started working 3 mornings a week at Babycakes' new Montessori school, while she attends. I really am sooooooo excited for the perfect fit! But not so excited about all the new germs we've been so lovingly introduced to. We've both been sick for a number of days, and it just makes everything so much more difficult. I have no energy, and when I should be resting/rejuvinating (ie. sleeping), I've been awakened by Babycakes who is uncomfortable, or has to pee, or who just needs her momma. This morning (early) I let her crawl into bed with me; she hugged me and then sneezed in my face. Lovely.
BUT, Here's to new friends, new skills, and newfound joy...
for the both of us :) Between all this sickness, a bajillion house projects, launching my Simple Portion bowls on Kickstarter, trying to explore our new town, and starting a new job (albeit part-time), my blogging has fallen a bit behind. Please forgive me! Here's a couple cute pics from our mini-adventures.
Babycakes is a natural-born trailrunner! She definitely did NOT inherit that from her momma!! She has zero fear, a multitude of energy, and so much determination! Her 2 speeds are: stopped (to investigate various items along the trail) and go-go-speed-racer.

Babycakes and her daddy played with cattails on our walk/run. I'm 32 and never knew they did that (blew into a million pieces if you hit them on the ground). #childhood #discovery

Introducing {Slow Cooker Pork & Beans}:
This hearty soup is a sophisticated spin on the traditional "pork and beans," using pork tenderloin as the base.

All 3 of us loved it. And no one said a word about the 4 cups of kale hidden inside :)

Slow Cooker Pork & Beans
Description
Slow Cooker Pork & Beans // @noshandnourish
Ingredients
Instructions
- Preheat the oven to 350 degrees.
- Mix first 5 ingredients (bbq thru honey) and coat the pork tenderloin with it in a glass baking dish.
- Bake the pork for 30 minutes.
- While the pork is baking, cut the kale into bite size pieces, removing any large stems.
- Saute the kale in a skillet, adding the bacon partway through.
- Once the pork has cooked for 30 minutes, take it out of the oven and cut it into 1.5 inch slices.
- Combine everything into a slow cooker and cook on high for 4 hours.
- Before serving the soup, remove the large pieces of pork and shred it, then add it back into the soup and stir.
- Serve with yummy bread (optional).
Yields 8 Servings

So tonight we gave this a whirl. First off, let me say you are brilliant! My picky 5 year old had no idea he eating a nice portion of kale with every bite. (I actually cut it up pretty small, probably smaller than bite size to help hide it a little better.) I was so tickled that he was eating something other than canned green beans without complaint.
And of course my wife and I loved it. It was very hearty which was the perfect fit for our cold and super windy weather we are having today. We are both excited that there was enough for both of us to have a very nice lunch tomorrow.

Oh and I'm 52 and NEVER knew that Cat Tails Blew up either when you slapped them on the Ground!! Great Discovery BabyCakes!! Maybe she can take a few to her School and demonstrate what happens with them to the other Kiddos..um outside of course.. Great physics experiment for the class...LOL
