Recipe: Steak Mole over Polenta

I made a super yummy new Mexican dish tonight... and I followed no recipe.  I created my own, and it felt (and tasted) astonishingly good! 

Introducing K's Steak Mole over Polenta!  And of course I documented the whole process by photo for your enjoyment :)

First, I sliced pre-made polenta (plain flavor) and baked it in the oven at 350 for 30 minutes while I was preparing the rest of the meal.

Then, I sliced round steak thinly and cut into about 1 inch long pieces.  I sauteed this in a skillet pan, and once most of the pink was gone, I stirred in 1 cup of mild salsa.  I let that simmer a few minutes, then added in a can of black beans.


I made the mole sauce in a separate sauce pan... 1 cup chicken broth, plus 1/4 cup of mole paste.

After about 30 minutes I flipped the polenta slices so they would get crispy on the back side as well.

Then, I put a scoop of the steak/salsa/bean mixture onto each polenta slice, followed by a drizzle of the mole sauce.

Then I sprinkled Mexican cheese on the top and baked them for another 5 minutes.

I served 4 pieces with a dollop of daisy sour cream in the middle: a lovely presentation!

I ended up only eating 3 because they were very filling!  I saved another 3 for lunch tomorrow, and put the rest in the freezer.  What a wonderful meal, evening, and accomplishment!

I also made little ones for Babycakes, with no mole sauce since it's a bit spicy.

Looks delish! Might try it w/o the mole sauce...I am not a fan of mole but the rest sounds great!
