Pooch to 5K + Cauliflower Pizza Crust

I'm in a weird mood: Kind of blah, kind of numb, kind of unmotivated. Not sure why. Nothing came to mind to write about tonight - and worse than that, nothing sounded good for dinner. I stared into the fridge, to no avail. Then I stared into the pantry, to no avail. Then the freezer... nothing. So I just didn't eat. That is very unusual for me.
I got home from work, Babycakes yelling "Outside" "OUTSIDE" in the backseat. I pulled her in the wagon to the park and we played for almost 45 minutes. She is so adventurous! I love it. She is 19 months old, but wanted to climb on, conquer, and do stuff that all the older kids were doing. She had no fear... and what a look of glee and satisfaction when she went down the giant slide all by herself, saying "again" before her feet had even touched the ground.
I had to peel her off the play equipment to get her back into the wagon for our trek home.
As soon as we walked in the door, she literally said: "Ready to eat, momma!" That is definitely the longest string of words she's put together yet. I made her (ie. heated up) parmesean encrusted tilapia with sweet potato fries. She devoured every bite, as I sat there wondering what I should feed myself. What would taste good? What would be worth photographing and blogging about? What would help my goals? All of it sounded like too much effort.
Hubby came home and wanted cereal for dinner (ok, also unusual). Still wasn't doing anything for me.
Then her bedtime routine commenced, and before I knew it... it was almost 9. At that point, it just wasn't worth eating anything (in my opinion). So now I will think about breakfast :) I am going to make a mean omlette with roasted red peppers, spinach, and maybe even a little cream cheese. Now, that's worth waking up for!
Recipe I'm excited about: (!)
I haven't had the chance to make this YET, but soooooooo want to. Maybe this weekend. My hubby LOVES pizza... like really loves... like if there was only one food left on the planet, he'd want it to be pizza. So, I have high hopes of possibly making "pizza" a tiny bit healthier (and not just by calling tomato paste a vegetable!) I found the recipe on the Meals & Move blog here. ingredients
- 1/2 head of cauliflower (yield 2 cups after grated/food processed)
- 1 egg
- 2 oz finely shredded cheese of choice (use a medium-softness cheese like mozzarella, cheddar, colby jack, pepper jack, etc)
- 3 TB nutritional yeast
- 1 tsp minced garlic (from the jar or fresh)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp ranch seasoning
- 1/4 tsp ground black pepper
- 1/8 tsp ground sea salt
- toppings of choice (see directions)
directions
- preheat oven to 450 degrees.
- grate raw cauliflower using a food processor or by hand with a grater. i am lazy and so i used my food processor–i pulsed until it reached a finely grated consistency.
- microwave cauliflower for eight minutes and then let cool.
- while cauliflower is cooling, prep your toppings of choice. choose a sauce (like marinara, pesto, barbecue, or alfredo), a cheese or two (feta, mozzarella, asiago, goat cheese) and your favorite toppings (sausage, chicken, pepperoni, bell peppers, mushrooms, olives, artichokes, onions.. okay, i will stop now!)
- once cauliflower has cooled to almost room temperature, combine it in a bowl with the remaining ingredients (aside from the toppings, of course.)
- spray a nonstick baking sheet or line with a silicone mat. (if you don’t own a silicone mat, you really need to get with it and buy one. they are the BEST.) spread mixture evenly on the pan so it forms a 9″ x 16″ rectangle.. give or take.
- bake for 12-15 minutes until edges are slightly browned.
- layer sauce and toppings on baked crust.
- place pizza back in oven until all the cheese is melted (if using cheese) and toppings are warmed through; about five minutes.
- slice & eat immediately. enjoy!
The only thing I'm nervous about is that I'm soooo not a cook. For example, where does one buy "yeast"? No, seriously, I haven't the faintest clue. I will definitely have to ask some grocery store attendant (unless one of you comments to me first!).
Exercise I'm excited about: (!)
It seems all most people who've lost a lot of weight somehow morph into runners. I am not yet one of them. Today, Corrie Anne recommended to me a program called "Couch to 5k" - intriguing! But what I found to be even more enticing is that there is a doggie variety: POOCH TO 5K! Bella has been packing on those pounds! Ha! Truth is we could both use the exercise. I am a reluctant runner. I don't really like it, but I do add it into my routine when possible. Even if it's just once a week. I actually have a 5K run this weekend that I signed up for and I haven't run in a while... it's going to be a tough one.

Kel, I absolutely luv, luv, luv the blog! The new look is fantastic! Also, I luv, luv, luv to run! Fortunately for me (unfortunately for others,) I have always been this way. One of the main reasons, though, is that my Dad got me into it when I was pretty young. He was an avid runner - my mom, brother, and I would go and cheer him on at races (Bolder Boulder!) when I was little. Then, one day, he asked if I'd like to go on a run with him. I think I was in 4th or 5th grade. We didn't go very long, but I remember thinking how amazing it all was! Soon after, my Dad and I took to running together almost once a week, then later, in middle school, almost every day. We would train for races together. What great memories! Now I love to run - and I'm quite a bit faster than my Dad :) I hope that someday I can take little Anna out on a run with Mommy in the same way my Dad did... and make a lifestyle of it for her too! Maybe a similar kind of tradition awaits you and Babycakes! It takes a little bit of time and commitment to begin experiencing the perks (endorphins) from running, but once you do, it gets easier and easier. Persevere for 2 months, then enjoy all of the benefits! I wish I lived closer, we could start a running club!

I would love to share time like that with Babycakes in a few years :) I have my first "official" run scheduled for tonight with Bella. Hubby & Babycakes will play at the playground while we run in the neighborhood. Could this be the beginning of something amazing?!?!?

Yeast + running
You can buy Nutritional Yeast (nooch) anywhere! Go to Whole Foods (because they are on every corner in Colorado) or sunflower market. Even King Soopers might have them in the natural foods aisle. I know that it doesn't sound appetizing, but nooch tastes really, really good. I can eat it by the spoonful!
The furthest I've run is a half-marathon. I did one back in '08 and was just like "alright, checked that off the list." I wasn't really bit by the running bug and don't like to PAY to run, but crossing the finish line is a really great feeling. My runs now are usually on trails or no more than 6 miles around my neighborhood. I only run when I WANT to, not when I feel like I HAVE to, because I enjoy a lot of other forms of exercise so much more.

Thanks for the info Lauren!! I go to Sunflower Market pretty often, so I will get some NOOCH this weekend :) And I like your running philosophy. I'm going to try it out for the health benefits (aiming for 3 times a week) and plan on NOT going crazy!

I've been enjoying your blog, Kelly! :) It seems we have similar goals, so I'm with you all the way! I've lost about 35 lbs, with ~30 to go. I just started the couch to 5k and I really like it. I actually went out with Pearl this morning and she was GIDDY! I had to keep it slow so she did't get too tuckered out, but that was fine by me. :) We both had a great time and I am certainly looking forward to our time together. Oh, and I have to say I am excited to try out your pizza crust recipe. Have you tried 'mashed potatoes' with cauliflower?

I am on week 6 of CT5K and can't believe I've made it this far. Its the best feeling in the world when you get done with your run and you can say...wow, i actually just did that! Good luck to you and no matter what, don't give up! If you have facebook, like the Couch to 5k page because there are some really motivational people on there. I've had rough days and I post on the wall and there are so many people who respond with such nice words of encouragement! good luck!!

Not a runner
I'm not a runner. Never have been, and now with two fake hips, never will be. But, I have discovered mountain biking. My goal is to get out an bike twice a week. If the weather is yucky, I'll hit up a cycling class at the gym. I went to Matthew Winters and rode for the first time since the new hip on Friday and it was fantastic. I was happy to know I can still ride a bike. On Sunday, South Table Mountain. On both trips, about an hour each, I burned 600 calories! I wear a heart rate monitor when I ride (and do most any workouts, except for water aerobics) which helps me keep my breathing in control and gives me the end benefit of knowing that the sweat also turned into calories burned!
Congrats on starting up the running and the puppies are adorable!
I'm too much of a wimp for mtn. biking!
Wow, mountain biking is HARD!!!!!!!!!!!!! I went a couple times with my hubby, who was into mtn. biking in college. Whew, I thought I was going to die! What a workout!! Glad you found something you enjoy so much and doesn't hurt your hips. :)
