Party Recovery + {Summer Tabbouleh}

In case you missed Friday's blog post or recent Facebook discussions/pictures, you should know, this past weekend was Babycakes' 2nd birthday!  I'm in full party recovery mode, which means ignoring all dishes, feet up on the coffee table, and refusing to do most of anything. I thoroughly enjoyed the celebration and Babycakes had an amazing time with her little friends, but I'm officially exhausted now!  So much energy and effort goes into the party prep and big day that once it's over, I feel like I have to take a few days to recover.  Do you relate? The good news is I still have a lot of leftover pancakes and blueberry banana bread.

And I made this before the party...

Every night when I would go out to water my garden, the parsley would stare back at me, begging to be made into tabbouleh!  So green, so full, so tantalizing!  I finally decided I couldn't wait.a.minute.more.

Instead of the traditional grain based tabbouleh, I added sweet kernel corn into the mix.  Extra veggies, extra light, extra summer-y, and extra good!

Zesty, crisp, beautiful - and very low effort for the return.

{Summer Tabbouleh}

Description

Summer Tabbouleh | No Sugar Sweet Life

Ingredients

2 cups
Parsley (diced)
4  
Roma Tomatoes (diced)
3⁄4 cups
Sweet Corn
1 tablespoon
Chives (diced)
1 teaspoon
Garlic (minced)
1⁄4 cup
Olive Oil
2  
Lemons, squeezed (juice only)
   
Salt & Pepper (to taste)
   
A sprig or two of mint (chopped)

Instructions

  1. Dice parsley, tomatoes, & chives.
  2. Combine everything in a small mixing bowl.
  3. Serve with pita chips, or eat as a side dish.

Yields 8 Servings

My party recovery mode usually involves lots of recouping on the couch with all those delicious leftovers. On another note, I started the 15 day reboot today with my boyfriend Bobby. I just received a text, "I'm hungry and all you gave me is salad. I need snacks." Should be a fun two weeks :). But I am looking forward to feeling so much better!!

Ignoring dishes and drinking coffee are definitely in my top 2 as well. I'm starting to think about planning a housewarming/Kevin's MB grad party this morning. The planning is more exciting than the clean-up!! lol

That salad looks amazing! Party recovery for me is usually cleaning my house from top to bottom then crashing on the couch!

You definitely have the better order: clean then crash. :) I crash and then have to psyche myself up to get off the couch to clean!

This looks SO delicious! I would have to load it with fresh cilantro though since I'm obsessed with it! I have to try this!
