Lemon Blackberry Grilled Cheese

If you've spent much time on this blog you know I don't like added sugar, I do like cooking with Greek Yogurt (especially breads!), and I love teaching my darling toddler about living the happy healthy life.  Another theme seems to be emerging though...a deep found love for grilled cheese.  First I made this Smashed Blackberry Grilled Cheese after I saw a mouth-watering picture on Pinterest.  Then I made this Strawberry Pesto Grilled Cheese. (Oh.my.yum!!!)  And yesterday I tempted you with this.  Now, I'm not planning on making an entire cookbook of just grilled cheese recipes (like one of my Twitter followers is!), but I do love all these fruity/cheesy combos!  So without further ado, let me introduce you to - the Lemon Blackberry Grilled Cheese. 

Lemon Blackberry Grilled Cheese:

A simple combination of flavors that bring a sophistication to the traditional sandwich: Lemon, Blackberries, Thyme, and Muenster.

(If I had fresh thyme, I would have used that).  Smash your blackberries in a deep bowl, and then add the lemon juice and thyme.  I just love the deep color of these berries!!

Layer the sandwich, blackberry mix on one side, sliced cheese on the other.

Coat each outside of the sandwich with butter. Grill until the cheese is melted and the bread is golden. Look at that purple!!

Description

A tart, yet sophisticated, grilled cheese made with Muenster, blackberries, lemon, and thyme.

Ingredients

6 ounces Muenster Cheese
1 package Blackberries
1 teaspoon Lemon juice
1 teaspoon Thyme
6 slices P28 High-Protein Bread (or other)
1 teaspoon Butter

Instructions

  1. Smash the blackberries in a bowl.
  2. Add lemon juice and thyme. Mix.
  3. Slice the Muenster.
  4. Build your sandwich - blackberry mix on one side, cheese on the other. 
  5. Butter each outside of the sandwich.
  6. Grill over medium low heat on the stove.

Yields 3 Sandwiches
