Hearty Breakfast Toast 2 Ways: Avo Lime + Thai Curry

Forget the sugary cereals, the giant carb-loaded bagels, and syrup-drowned pancakes and upgrade your breakfast to one of these hearty breakfast toasts! I tend to alternate between one of these super-nutrient-packed toasts, green smoothies like this one or this one, and my perfect scrambled eggs (recipe in my Superfoods' cookbook). These toasts have:

  • healthy fat
  • fiber
  • protein
  • fantastic spice and flavor
  • crunch
  • fabulous color

All of these things work together to keep you full longer and give you a completely satisfying breakfast.

The Avo Lime is my absolute favorite!! And this satisfying breakfast comes together in 5 minutes or less, which on a busy morning means the world to me. AND there's no blender to clean like after this green smoothie, LOL!

Just LOOK at the close-up of all the goodness layered on that bread! Speaking of bread, my favorite these days is made by Eureka Baking Company --- Seeds the Day! As mentioned in last weeks' protein post, each slice has 5g! And those gorgeous seeds along the entire crust?! Swoonworthy!

This Thai Curry version deserves just as much attention because the flavor combo really is such a refreshing, savory twist on breakfast. And the bell pepper gives you a burst of vitamin C, a perfect start to your day!

Both hearty breakfast toasts happen to be vegan (dairy-free, egg-free, meat-free), yet are packed with protein and will keep you full through the morning! Plant-based breakfast never tasted so good!

Avo Lime Toast

Description

Hearty Breakfast Toast: Avo Lime // via Nosh and Nourish

Ingredients

1 slice hearty bread (I like Eureka's Seeds the Day bread)
1⁄2   an avocado
1 teaspoon lime juice
1 tablespoon fresh cilantro
1 tablespoon coarsely chopped pistachios
1 teaspoon Paprika

Instructions

  1. Toast your bread to your desired crispiness.
  2. Slice the avocado, with outer skin and pit removed. Then, lay the slices in a single layer over the bread.
  3. Use a fork to gently mash it down onto toast (optional).
  4. Add the next ingredients in the following order: sprinkle lime juice evenly over avocado, then lay out cilantro leaves in a single layer, the sprinkle coarsely chopped pistachios evenly, then finish with paprika.
  5. Devour!

Thai Curry Toast

Description

Hearty Breakfast Toast: Thai Curry // via Nosh and Nourish

Ingredients

1 slice hearty bread (I like Eureka's Seeds the Day bread)
2 tablespoons garlic hummus
1⁄3   Bell Pepper (roasted)
1 tablespoon Shredded Coconut (unsweetened)
1 teaspoon Curry Powder
1 tablespoon pepitas (raw pumpkin seeds)

Instructions

  1. Toast your bread to your desired crispiness.
  2. Roast your pepper in a toaster oven for 15 minutes at 425 degrees (optional) -- you can also slice and eat it raw.
  3. Spread the hummus evenly over toast.
  4. Add the next ingredients in the following order: sliced bell pepper, shredded coconut, curry powder, then pepitas.
  5. Devour!
