Determination + {Strawberries & Cream Pancakes}

Last night everything was screaming "NO RUN"...legs were sore, Babycakes wouldn't go to sleep, stomach hurt, and even dear hubby was whispering: "You could just skip it tonight." But my heart wanted it. I had commited to YOU on Facebook that I would run 2 miles after work, and I just wanted to do something GOOD for my body. So, I tied those purple laces and headed out the door while dear hubby played with Babycakes. I ran 2.16 miles, shaved a full minute per mile off my time, and made it home before dark. I felt amazing and accomplished! Then, I washed the sweat off my brow (and arms and legs and everywhere...ha!) and laid by Babycakes and sang her lullabies 'til she fell asleep.
Speaking of Babycakes, she loves pancakes. So much so that I'm *thinking* about having a "pancake party" for her 2nd birthday. And so much that I basically make them at least once a week for her to eat devour. This weekend I made something super yummy and a *bit* healthier than the normal pancake breakfast.
Introducing Strawberries & Cream Pancakes:

The least healthy part of "pancakes" is usually the SYRUP. So I created a cream sauce alternate, with tons more protein and significantly less sugar/calories.

Cream Sauce Ingredients:
- 1 6oz Strawberry Banana Greek Yogurt (I used Chobani, of course!)
- 1 Tbsp Maple Syrup
- 1 packet Truvia
It was the perfect consistency and sweetness! Though I don't know if it was super photogenic. I tried my best to drizzle it perfectly, but it definitely looks messy!

But boy is it delicious!
Pancake Ingredients:
- 2 cups pancake mix (I used Healthy Start Bisquick)
- 1 pouch of Happy Tot Plus: “Strawberry, Kiwi, Beet, & Pears”
- 3/4 cup milk (I used almond, but you could use skim or whole)
- Toppings- extra sliced strawberries
The pancakes were like an inch thick and incredibly fluffy!
Questions:
- Do you talk yourself out of exercising? Or do you commit / push through more often than not?
- Thoughts on using a yogurt based cream sauce instead of syrup?

you go girl! you rock!!
you go girl! you rock!!
Thx girl!
I so appreciate your encouragement.. THANK YOU!
Cream sauce = yes please!
The cream sauce sounds awesome- I love the flavor of maple syrup...mmm...
I might have to make that to go with the protein scones I made last weekend! I usually top my pancakes with heated up fruit that's mashed up with a little stevia (if needed) so it's like a fruity syrup and THEN put a little Greek Yogurt on top.
Good for you for pushing past the mental barrier and going on your run. I find that I only really get that barrier if I'm doing something I "don't want" to do. Luckily, I have found so many forms of exercise that I LOVE and look forward to.
But, I'll be honest- OF COURSE there are days when I'd rather just lay in bed than go teach a class, but then I just focus on the fact that I always feel SO GREAT afterwards.
lemon cream sauce
I bet this would taste so good in Lemon yogurt form - on your lemon/blueberry scones!!
I talk myself out of working
I talk myself out of working out all the time. If only I could incorporate that more often I'd be in good shape. My eating is so much better than my working out. I guess half the battle is won :) Keep up the good work!
Good eating is MOST of the equation :)
If you're doing good with the eating, you're MORE than halfway there. I think it's probably 80% eating, 20% *(or less) exercise.
HOLY MOLY
Those look sinful Kelly!
The only time I have to talk myself out of working out is if I get a migrane, cause if I workout it just gets worse and then I get a talking too from the fiance for pushing too hard. :)
not so sinful :)
They're really not that *bad* for you - high in protein, low in sugar, low in calories... AND really filling... so I only had one pancake. Add a side of turkey bacon, and you have a well-rounded meal :)
Finding accountability
It is so easy to talk oneself out of working out! Good for you to go forth and run! As you found with the FB post, the accountability is so helpful. I've been seeing a trainer for strength training, which gets me into the gym. Since I'm already sweaty, I am more motivated to kick out 30 or so minutes of cardio. Having a fun exercise to look forward to is great, too! My women's mountain bike group helps fit that bill!
Oh, and the pancakes look yummy! No wonder Babycakes loves them so much!
accountability is good!
Especially when it's not coming from your spouse :) For some reason spouse-initiated accountability just feels like nagging!!
Haha
so true - the husbands do become naggers all too quickly!
:)
He doesn't nag - I just interpret it that way... I think it's the whole you're supposed to love me however I am, that makes "spouse accountability" hard for me. So I outsource my accountability now - to girlfriends and FB and this blog :) And it's working so much better!!!
Good point - Matt doesn't nag
Good point - Matt doesn't nag, but I, too, interpret it that way, sometimes. Although, he has be great about dishing out compliments, so that always helps!
Yay! Glad you made it out
Yay! Glad you made it out there!!! You never regret it, right??? I love the pancake party idea. We seriously considered it for our wedding reception. I loved this inspiration: http://greenweddingshoes.com/a-wedding-inspired-by-500-days-of-summer-pa... haha. probably too fancy for a kids' birthday party, but you might be able to find some inspiration.
thx for the link
I'm thinking pancakes with tons of toppings - blueberries, bananas, yogurt, granola, and maybe even some colorful sprinkles. Some sides of turkey bacon b/c Babycakes often tells me "I love meat"... hahaha!!
Yum!! Those look great! I
Yum!! Those look great! I like to use yogurt on my pancakes instead of maple syrup every once in awhile, but sometimes I just love me some maple syrup too. :) Now I want to try out your cream sauce topping though! It sounds yummy!
Not photogenic?! I want to
Not photogenic?! I want to lick that "syrup" right off the screen! I do a similar pancake and waffle topping with Chobani a lot too. I feel like I need to get some protein in those kind of breakfasts so it's a great way to do it :)
