{Creamy Lemon Chicken Pasta w/Greek Yogurt}

Why, hello there!  I am excited to finally have a new recipe to share with you...it's been awhile :)  The whole juice only, no eating, no cooking thing really put a damper on my recipe posting frequency!  So in honor of Chobani GIVEAWAY week, I am going to feature a couple of different Greek Yogurt based dishes.   If you haven't tried my Greek Yogurt Blueberry Banana Bread yet, you sooooooooo should!!  Some of my readers have already made it multiple times, it's that good!  Tonight's meal, Creamy Lemon Chicken Pasta, features Chobani's Lemon Greek Yogurt as the cream sauce's base.  Yum!!  With stats like Chobani's, you don't need to "hold the cream sauce"!

Introducing Creamy Lemon Chicken Pasta:

I was in a hurry this particular evening after an extra stressful day, so I took a LOT of short-cuts.  The good news is: you can still eat healthy, even if you're busy.

First gather your ingredients.  As you'll see, I started with leftover Rotisserie chicken rather than raw chicken.  This saved at least 10 minutes of cooking time and was a great use of leftovers!  I just shredded the meat off of the bone and then heated it up/sauteed it with some Montreal Chicken Seasoning. 

I also steamed the broccoli in the microwave.  It cooks it PERFECTLY!  Add about 1.5 inches of water into a microwaveable bowl.  Then add in your cut broccoli pieces.  Microwave on high for 2 minutes.  Voila, perfectly steamed broccoli!  Then I sauteed everything together over medium heat.

It was a nice light creamy dish with hints of lemon and a unique sweetness. 

Ingredients:

  • 6oz Chobani Lemon Greek Yogurt
  • 3 Tbsp Sour Cream
  • 1 cup chicken broth
  • 1 Tbsp flaxseed
  • 1 Tbsp nutritional yeast
  • 1/2 tsp Montreal Chicken seasoning (by McCormick)
  • 2 cups of broccoli, steamed
  • 2 - 3 chicken breasts, or Rotisserie chicken (pre-cooked)
  • Penne

Directions:

  1. Boil water, and cook pasta
  2. Shred chicken (if pre-cooked) or dice into small pieces (if raw)
  3. Cook chicken over medium heat with montreal chicken seasoning
  4. Steam broccoli in the microwave - 2 minutes on high with 1.5 inches of water in a bowl
  5. Add broccoli and remaining ingredients (except the yogurt) into the pan with the cooked chicken
  6. Stir thoroughly and cook for about 6 - 8 minutes until sauce is heated through
  7. Add Chobani Greek Yogurt and stir until smooth
  8. Serve over pasta, and enjoy!

I had a great recipe for a crock pot chicken meal that I found on Pinterest. It called for a whole block of cream cheese. I thought I would be super smart and substitute some plain Chobani for the cream cheese. I learned a BIG lesson that day (that they kind of point out at the bottom of the chart you posted). DO NOT add Chobani until the end of the cooking process! When I got home, my wonderful crock pot dinner was a curdled mess! However, I have since made the same recipe but waited to add the Chobani to the crock pot AFTER I got home and it worked perfectly.
TL;DR - Don't put Chobani into the crock pot and let it cook all day. Wait until the end to add it and all will be well :)

I should probably amend my directions above to notate that...add the Chobani last!! THANKS girlie!!

I sub everything I can, but don't compromise on things that "make a difference" or make a dish taste like "diet food." I love the Cho conversion chart though- that is pretty handy!
I steam broccoli in the microwave, too. I bought a little microwave steamer from Pampered Chef YEARS ago that I use several times a week.
I need to make your banana bread. I have about 8 super ripe bananas sitting in my kitchen right now, which I was planning to freeze for smoothies, but the bread might win out!

but I'm wondering if it's suppose to be really heavy vs light and fluffy? I followed the directions and it baked through and of course tastes delicious(go blueberries!) just a tad bit on the heavy side. is there anything I could have done different?

Sorry Abbey - I'm not "really" a baker. My first guess would be to try one less banana, as those are heavy and dense.

My kids GOBBLED this down. And I pinned it ;) Changes I made- had no sour cream, nor lemon Chobani- so, I used Fage plain nonfat instead, added lemon and lime zest. Didn't have the chicken seasoning (subbed in Mrs. Dash's Low Sodium Fiesta Lime seasoning), nor broc, so I added sauteed red bell pepper and asparagus to it. Yum!

I might have to make this variation soon :)

Can you substitute the chicken broth for the pasta water?
