Inside MY Fridge + {Blueberry Banana Bread}

Check out my interview with Inside the Fridge's Robin Plotkin, where she asks me questions about my shopping and food habits, coveted fridge items, convenience products, meal prep, and more. And take a peek in my ACTUAL fridge. I can already tell you there's a few things I wish you couldn't see (ha!) like the creme brulee creamer, miracle whip, and butter :) I promise, they hardly get touched!
And if you leave me some love over on the Inside the Fridge Blog, I'll be forever grateful!
Recipe I'm excited about: (!)
I am sooooooooooooooo making this THIS weekend. It sounds delicious and I already have most of the ingredients from this week's shopping trip. The recipe is for Blueberry Greek Yogurt Banana bread, originally posted here. This is a healthy alternative to traditional breads made with oil, and the greek yogurt keeps it super moist!

*UPDATE - Here's how mine turned out. Click here for the adjusted recipe.

I'm starting Monday too!
Hi Kelly, I too am starting the reboot on Monday (this will be my very first time). I have my recipes all printed out and a shopping list together - I'm a little worried about the $$$ I’ll spend but headed to the local farmers market tomorrow morning to buy local and fresh.
I'm 60lbs overweight and I'm sick and tired of being sick and tired of being FAT! I have two daughters - 9 & 10 and a baby boy who will be 2 in June... I was just about to try the HCG remedy when I watched Joe's documentary – so inspiring!!! Better to put natural veggies and fruits in me than a hormone!
I bought my juicer yesterday Breville and actually weaning myself off coffee – I’ve had a terrible headache for nearly 48 hours. I’m hoping that this will diminish over the next few days – I was only a one cup a day girl but boy – this headache is proving a lot worse than I thought.
I would love to join you on this next 5 days – it will be great to have a buddy! My plan is to do the 5 days of food & juice per the Classic Reboot and then instead of 5 days juicing I’m going for 20 and then I’ll turn the next 5 after that into food and juice and see where I’m at… I’m hoping to be a minimum down 20 lbs with hopes of 30lbs with a complete overhaul of my food addiction – it’s really BAD right now.
You are a true inspiration Kelly and I’m curious how your first 47 lbs gone has taken you and what that journey has looked liked for you… my difficulty is family time everyday around the table – we literally eat every meal together and I prepare – I love the advice to juice first and then prepare – that way I can sip along while I cook for them – serve them and not cheat – although I’m not much of a cheater – I’m very much all or nothing so I am confident this will work for me.
Anything you can share or direct me to your blog from day one - I'd be so appeciative!!!
Did the Reboot
Glad to see that you are bringing focus to this. My husband and I did the juice only reboot for 3 days and then tapered to the juice during the day with plant based meals for dinner. We did that for about 10 days and have transitioned into a vegan diet completely. It gets easier every day. I too struggle with weight and this has been one of the easiest ways to stick to a diet. I have lost 15 pounds in 5 weeks. After your reboot, you might consider looking into the Engine 2 diet. It focuses on plant strong eating and the recipes are easy and delicious. Good luck to you!
Blueberry bread
That bread does look fantastic! One thought, if you are subbing the sugar with the banana, you may need a little more flour to help counteract the extra moisture that the banana will bring. This will also help with the altitude. Joy of Cooking says to increase each cup of flour by up to 2 TBS and reduce each teaspoon of baking soda by 1/8 to 1/4 teaspoon. Increase each cup of liquid by 2-4 TBS. (I think the banana will take care of that!) You may also want to raise your oven temp by 25 degrees.
Am anxious to know how it turns out :)
We are spending the weekend doing house stuff on Saturday and then Easter with my mom. Looking forward to a beautiful weekend.
You may have just saved my bread :)
Thanks for the awesome advice, Rebekah!!! I am definitely going to follow your suggestions tonight :) Have a GREAT weekend! And of course I'll let you know how it turns out - via blog post with lovely pictures.
