JointheReboot + Italian Polenta

Well first of all, I must say, I have been overwhelmed with joy and thankfulness at the response to my recent guest blog post on the "Fat, Sick, & Nearly Dead" website. You can read the full post here. This has been quite the journey with many celebrations and mini-milestones along the way, but I must say that this moment has been the best yet. To actually feel like an inspiration to others (you!)... WOW!! What a feeling!! THANK YOU for taking the time to stop by my blog and share in this journey with me. I hope that I will continue to be an encouragement to you, but also provide you real tools, recipes, and ideas to hit milestones in your own health journey.

This weekend I had my inlaws over for dinner. Though my hubby swears I don't have to prove anything to them, I always want the house to be clean enough, the meal good enough, etc... when they come over. The result? We hardly ever invite them over! Ha! I know, that's terrible. But as a full-time working mom, wife, and blogger, there's not a ton of time for continual tidying and elaborate meals. All that build up to say it was a big deal they came over. I created a new meal for them with my favorite new food to experiment with: polenta.
Here's the recipe for Italian Polenta:
Ingredients:
- 1 roll of Basil/Garlic Polenta
- 1 lb chicken breasts
- 1 jar organic tomato sauce
- 1 jar white wine butter cream sauce
- 1/2 cup mozzarella cheese
- 1 pkg provolone cheese
~Serves 4 - 6 adults
Directions:
- Boil a stockpot of water
- Add chicken to boiling water, boil for about 10 minutes or until cooked through (no pink)
- Heat oven to 400 degrees
- Line a baking pan with foil and spray with non-stick spray
- Slice polenta into 2mm rounds (should equal about 24 slices)
- Bake polenta for 20 minutes, flipping once halfway through
- Shred chicken and separate into 2 bowls
- Mix one bowl of chicken with tomato sauce & 1/4 cup mozzarella cheese
- Mix the other bowl of chicken with cream sauce & 1/4 cup of mozzarella cheese
- Spoon some of each mixture onto the polenta rounds (I did 12 of each)
- Bake for 10 minutes to make sure chicken is heated through
- Cover each "round" with 1/4 slice of provolone cheese
- Bake another 5 minutes until cheese is melted and browning
- Add a basil leaf on top of each
- Enjoy!!
I'm Italian. I LOVE italian food!!! The polenta was a great subsitute for regular heavy pasta. One serving (five slices) of the polenta only has 70 calories. That is waaaaaaaaaay better than a cup of pasta I might normally have. Here's the sliced polenta in the oven:

The shredded chicken in 2 separate bowls:

After mixing in the 2 different sauces and cheeses: Mmmmmmmm!

After scooping the chicken mixtures onto the polenta rounds:

After the cheesy melted goodness: (Note, I didn't have any fresh basil sprigs, otherwise I would have added them on top of the melted cheese.)

And the final product, accompanied with garlic broccoli made by my MIL. It was a fabulous pairing! Everyone loved it. I served garlic parmesean french bread with a plate of olive oil and balsamic vinegar for the non-dieters in the family (uh, everyone but me! Ha!!) I really didn't miss it though because LOOK how yummy that food is!!!

What is Reboot?

Hi V :) A Reboot is basically a time where you "Reboot" your body/system by doing a combination of eating fruits/veggies and just juice. There are different lengths of Reboots based on your individual situation. There's a link above which takes you to the Reboot site where you can take a quiz to see which (if any) Reboot is right for you. I did the 10 day version last August... 5 days of clean eating followed by 5 days of juice. For me, it really helped jump start my weight-loss and killed all cravings for sugar and unhealthy food. Your body just feels so gooooooood when you give it good fuel!! If you have more questions, feel free to ask!

I really, REALLY want to do a reboot...but I am worried because I do not have tons of money to spend on a juicer. I know you said you can get one for 20 dollars but like you I am a full time mom/worker/wife and I just keep finding excuses not to do it! A lot of times too, I feel overwhelmed when starting something like this. I am a once a week shopper and I would need to buy everything for the week on Sunday and that overwhelms me. and your italian polenta, WOW...looks amazing. I would be impressed! :)
Rebooting on a budget

The biggest commitment I think is the time it takes to actually prepare the juices, clean the juicer, etc... I would plan on at least 30 minutes a day.
You can also supplement with some of the Naked juices or Odwalla, if you're pressed for time on a particular day.

My weight is something that I've battled my entire life, and probably always will. Though I'm not completely happy with my body right now, I know that I am much healthier and in better shape than I ever have been.
I love polenta- and your recipe looks incredible! I must try it! I haven't bought a polenta "log" in a long time, I used to eat it 3-4 times a week!

Yes on eating/juicing days
You can use a blender & do smoothies on the eating/juicing combo days, but for the strictly juice days, you'll need a juicer. I bought a cheap one at Walmart to get started ~ $29. I have links here: http://nosugarsweetlife.com/content/recipe-mean-green-juice

Hi Kelly! I am a 37 year old Mom (2 boys) and wife. I wanted to Thank you for sharing your story with us. It's so inspirational to see another woman who has to deal with Motherhood, being a wife and just life in general be able to make the changes you did. My Husband and I want to do a reboot. We haven't yet because we feel it's necessary for one of us to be "all there" for our boys during those first few days when it can be bad. We hope to figure out the timing SOON! How was your first reboot? Did you have a hard time in the first 3-4 days like everyone says?
I am a sugar addict! I have PCOS and Fibromyalgia and need to lose at least 40lbs!
I KNOW that diet is the answer....nothing else has helped and I have given up on the Medical Community!

You can do it!!
I guess my best advice would be to go into it slowly. Try to cut sugar and caffeine out for a couple WEEKS before you do the full on Reboot. Eating cleaner leading up to it will help alleviate those "terrible" first few days. I think it's usually bad b/c people stop all their regular habits cold turkey and your body is like, "what the heck???!!" So easing into it is best. I would think it'd be easier to do WITH your hubby, since you'd already be making the meals, juicing, etc... but whatever you feel the most comfortable with. I'm planning on doing the Classic Reboot starting on April 9th, if you want to gear up to do it with me at the same time. I will be sharing recipes and blogging about the experience, struggles, etc... Think about it at least :) But like I said, try to start limiting and cutting back on sugar and caffeine now.

Congrats Kelly! I was happy to find your website through the reboot website. Thankfully, after a health wakeup call, simultaneously my husbands doctor had him watch the Fat Sick and Nearly Dead movie, and his workplace initiated a biggest loser weight loss competition with a money prize. Now he is on day 20 of the Reboot juicefast, and 20 lbs lighter, which is wonderful. I hit the website when I heard him fantasizing about a rack of ribs, supreme pizzas, etc. So you are my big helper here...I need these recipes!!! I am mixing eating and juicing in part because I'm a little worried for my husband RE bounding, and I need to use this opportunity of him being pretty much off all non-juice food (He will eat a salad or an avocado) to tempt him with the best most delicious healthy food, to reprogram those barbeque house fantasies! With help, I hope to have a good case made for healthy eating (hopefully my weight loss will be a solid part of it) before the final cash prize weigh in in 30 days. So now you're my bud...keep those good mostly vegetarian pretty recipes a-comin.
