{Pineapple Teriyaki Meatloaf} made with Greek Yogurt

There's some people who just like things the way they like them: Traditional. Simple. Predictable. I'd venture to say Dear Hubby is like this...in most areas. But me, not so much. I like flair. I like creativity. I like trying new things. I like making grilled cheese with blackberries & basil. I like creating and being messy in the kitchen. Which brings us to last night's dinner. I had a pound of lean ground beef in the fridge that I knew I had to use. Traditional would say: make hamburgers. Or make taco salad. Or make sloppy joes. Or make plain meatloaf. But I wanted to do something different more interesting. If you've ever had the Bonzai Burger at Red Robin, you are going to love this recipe!!
Introducing Pineapple Teriyaki Meatloaf:
A little bit sweet, a little bit salty. An island party minus the umbrellas. It came out perfectly browned yet juicy.

I made a sauce/gravy to top the meatloaf out of the following ingredients:

I served it with mashed potatoes, and just did small portions (less than 1/4 pound per person). But you know me, to increase the health-factor, I just HAD to throw in a little Chobani Greek Yogurt!

Ingredients:
- 1 lb lean ground beef, I use organic grass-fed when possible
- 4 pieces of toast, crumbled/crushed
- 1/2 cup diced pineapple
- 1/4 cup Chobani pineapple Greek Yogurt (instead of using a traditional egg)
- 2 tsp minced garlic
- 1 tsp soy sauce
- 1 tsp honey
- 1 tsp molasses
- 3 slices bacon (I used thick "center-cut" bacon)
- potatoes to mash
- sauce/gravy: 1/2 cup Island Teriyaki marinade, 2 Tbsp pineapple juice, 1 Tbsp water, 1 Tbsp flour
Directions:
- Preheat oven to 350.
- Combine first 8 ingredients (through molasses) together in a mixing bowl.
- Form into a meat block and place on sprayed aluminum foil; and top with 3 slices of bacon.
- Bake for 40 minutes at 350, then raise temp to 375 to finish it off for the remaining 20 minutes.
- For Sauce, heat the Island Teriyaki marinade & pineapple juice over medium-low heat. Once hot, slowly stir in the flour, stirring regularly until it reaches your desired thickness.
- Drizzle sauce/gravy over sliced meatloaf. Serve with mashed potatoes.
- Take a bite. Take another bite. Smile. Repeat.

I'm actually making roasted pork with pineapple tonight for dinner- it's such a yummy combo! Greg would love this meatloaf! Thank god he's a pretty adventurous eater- I'd probably go nuts otherwise!

These recipes rock, can't wait to try this one, the blackberry basil grilled cheese was good, and hubby may actually like this, I know I will can taste it already, I don't think my Sunflower carries pineapple though, I looked for ut a couple months ago for something else and no go. I will check again, can't wait to try this one!

I made this tonight, had to modify it a bit, I could only find crushed pineapple, and I used 1/2 lean beef 1/2 turkey, and added sauteed onions and garlic, and I used plain NF CHO, yummy looking forward to lunch leftovers, I used some of the extra pineapple, soy sauce, water and brown sugar thickened with cornstarch for my sauce. Looking forward to more of your yummy creations.
Crushed crackers instead of toasted bread?
If you're not using crumbled/crushed toast....how many crushed crackers would you use?
i just made this with a few
i just made this with a few different variations. I used half ground beef and half ground italian sausage. I used sour cream instead of the yogurt, and I also used sliced pineapples rough chopped (that's all i had). I made a basting sauce using the juice from the canned pineapples, soy sauce, molasses, minced garlic, and a touch of sweet baby rays honey bbq sauce. Went great with steamed rice and a side of green beans...yum
greek meatloaf
I use ground chicken or lean ground turkey-maybe 2 lbs,chopped mint-approx a tbsp, grated onion, 1 clove of garlic-minced, salt/pepper, panko, a dash of milk and one egg ( you can sub oats for panko)-bake 375 for 90 minutes, I free form mine on parchment paper atop a baking sheet (checking for doneness, this is poultry not beef). While baking, I take 1 english cucumber, peel and dice up well,add some greek yogurt (to your preferred consistency)add a little fresh dill, dash of salt, pepper and a squeeze of fresh lemon-refrigerate until loaf is done. Let the loaf rest for a few while you assemble a whole wheat wrap, or pita with some lettuce ( I like romaine) fresh tomato slices ( I like roma-they fit nicely in the pouch). Slice up the loaf into thin as you can get slices, tuck them in the pouch with the veggies and top with plenty of the yogurt sauce--enjoy! I make an orzo salad for the side with some kalamata olives and a little feta..opa!
