Go-To Meal: Taco Salad

I got this idea from one of my new Blends (Blogger + Friend), Lindsay. She blogs over at The Lean Green Bean. She talks about in this post, how we all have "go-to" meals...you know, the ones that are quick and easy and delicious and that we can pretty much make in our sleep. I loved her series idea so much that I want to do it on my blog as well. These go-to meals are often simple and maybe don't seem worth blogging about (or photographing) at first glance, but I'm a firm believer that we ALL need some quick easy go-to meals throughout our week when we're super busy! Today's go-to meal is...
*Taco Salad*
I was planning something else for dinner, but then I saw this:

Isn't that the most beautiful, glorious, GLOWING lettuce you've ever seen growing in your life?!? OK, I was a little excited about the lettuce if you couldn't tell. Here it is prepped and washed on a plate (still gorgeous!):

I make two versions of taco salad, one for myself and one for Dear Hubby. One is healthy. One is not. You can guess which is which :) Here's one:

I hope you can tell from the doused Catalina, that the one above is Dear Hubby's.
Dear Hubby's Taco Salad (in alternating layers):
- Red Leaf Lettuce chopped
- Lean beef with taco seasoning (I used McCormick's Low Sodium variety..and it was STILL really salty!)
- Blend of 4 Mexican Cheeses, shredded
- Crushed Doritos
- Catalina Dressing
Mine is much lighter with a spoonful of salsa and a dollop of plain Chobani as the "dressing":

Kelly's Lighter Taco Salad:
- Red Leaf Lettuce chopped
- Lean beef with taco seasoning (I used McCormick's Low Sodium variety..and it was STILL really salty!)
- Blend of 4 Mexican Cheeses, shredded
- 1/2 a sauteed red pepper
- 2 Tbsp salsa
- A dollop of plain Chobani yogurt (instead of sour cream)
- A few chips to adorn the edges, these are Gluten-free Rice chips - super yummy!
- Additional toppings (optional) which I didn't have: avocado (YUM!!), black beans, and mango.

We are taco salad people too
Ha! Greg and I had taco salads last night- it's definitely one of our go-to meals! And I definitely had the "healthy" bowl. He just had rice, lots of beef, homemade pico de gallo and a big dollop of Greek yogurt on his (he would have added cheese, if we had any). I had a ton of lettuce, a little beef, sauteed portobellas + onion with taco seasoning (my trick to bulking up beef), homemade pico, cucumber, red bell pepper and some avocado-citrus dressing. Oh, and some Greek yogurt too, of course. I also crumbled some Beanitos over the top. This meal is always so filling, and has so few calories. And- I have leftovers for lunch today and another day this week!

I just subscribed to your blog yesterday because I am always looking for Chobani-incorporated recipes.
Great job by the way and your pics clearly illustrate the process and end product. I like the healthier version but what do you think works well as a meat substitute? Perhaps more beans? Tofu crumbles?

My family has always made taco salad w/o meat. We use kidney and/or black beans.

Mexcian food is our go too, but heatlhy mexican food. Lots of veggies, none of that butter and cream stuff. I think I probably bleed salsa or avocados.

Ha! That's exactly how I cook for my husband. I noticed last night that I tend to just double the cheese on his and just sprinkle it on mine. Mexican-inspired stuff is definitely a go-to for me too!!

i'd definitely go for your version! ;) i make a similar taco salad, except i use lean ground turkey. i LOVE it and it's so simple!

Make your own seasoning!
I make our taco seasoning, which allows me to control the salt! 1 T chili powder, 1/4 t garlic powder, 1/4 t onion powder, 1/4 t red pepper flakes, 1/4 t oregano, 1/2 t paprika, 1 1/2 t cumin, 1 t salt, 1 t pepper. I use 2 T of this mix plus 1/4 c water to simmer 1 lb of ground turkey.

Thanks so much, Lauren, for sharing this! I am definitely going to try this next time. Dear Hubby and I were just talking about last night how we feel like "they" changed the taco seasonings' recipe to make it all too salty.
